JOB SUMMARY

About the Role

As the Food & Beverage Manager, you will oversee all aspects of the hotel's food and beverage operations, including Moxy Bar and Kitchen, Little Baxter, Pick Up’s and 5 conference and events spaces. You will lead, inspire, and develop a dedicated team while ensuring operational excellence, profitability, and exceptional guest satisfaction.

Reporting to the Operations Manager, you will play a key role in shaping the guest experience and driving the commercial success of our F&B offering.

Key Responsibilities

Lead the daily operations of all food and beverage outlets.
Create a vibrant, guest-focused atmosphere aligned with the Moxy brand.
Recruit, train, coach, and develop a high-performing F&B team.
Drive revenue growth through innovative promotions, activations, and upselling initiatives.
Manage labour costs, rostering, and productivity targets.
Oversee stock control, purchasing, inventory management, and supplier relationships.
Maintain high standards of food safety, hygiene, and workplace health and safety compliance.
Monitor financial performance, prepare budgets, and achieve profitability goals.
Collaborate with Sales, Marketing, and Operations teams to maximise guest engagement and business opportunities.
Ensure Marriott brand standards are consistently delivered.

What we are looking for:

Proven experience in a Food & Beverage leadership role within a hotel or premium hospitality environment.
Strong understanding of restaurant, bar, and hotel F&B operations.
Demonstrated experience leading, coaching, and developing teams.
Exceptional guest service and relationship-building skills.
Strong financial and business management capabilities.
Excellent communication and problem-solving skills.
Knowledge of food safety regulations, liquor licensing requirements, and workplace health and safety standards.
Ability to thrive in a dynamic, fast-paced environment.
Flexibility to work a rotating roster, including evenings, weekends, and public holidays.
