PASTRY COOK – QUALIFIED AND EXPERIENCED

At Burleigh Baker, we are dedicated to creating nutritious and delicious products that support gut health. We believe in the science behind our ingredients, ensuring that every loaf of bread pastry, viennoiserie and dish not only tastes exceptional but also promotes a healthy lifestyle. We use only natural ingredients (no premixes), low-input flour from sustainable mills, and a nutrition-first philosophy across all departments.

You will enjoy a good work/lifestyle balance; shifts are usually 8 hours long, between 6 am and 6 pm, with Saturday or Sunday work determined by a rotating roster.

What We're Looking For:

Expertise in Long Fermentation & French Artisan Techniques: We’re seeking a Pastry Cook with a deep understanding of sourdough fermentation and French-style baking.
Commitment to Nutrition: You are passionate about creating food from scratch with natural, unprocessed ingredients and nutritional integrity.
Creativity and Innovation: You can bring fresh, seasonal ideas to our pastry and savoury ranges while respecting our brand values.
Attention to Detail: You have a high standard of quality, precision, and consistency across all products, whether sweet or savoury.
Team Player: Collaboration is at the heart of our kitchen. We’re looking for someone who thrives in a team and brings a positive energy to our bakery, kitchen, and pastry sections.

Responsibilities:

Planning, preparing and baking a broad range of artisan Viennoiserie and pastries, including sourdough Croissants, Danishes, Cakes, Pies, Quiches, Tarts, cookies and biscuits.
Applying long fermentation and French artisan techniques to all baked and cooked products.
Weighing, mixing, kneading, moulding, rolling, and shaping doughs for Pastry, both sweet and savoury applications.
Preparing sauces, creams, glazes, fillings, compotes, and purees using traditional methods and FinTech equipment.
Monitoring the quality of raw and cooked ingredients and finished items to meet Burleigh Baker’s high nutritional and taste standards.
Operating and maintaining a variety of commercial pastry equipment such as ovens, dough sheeters, mixers, slicing, shaping tools and bench tools.
Managing stock levels by estimating food and ingredient requirements and ordering accordingly.
Ensuring hygiene, food safety, and workplace health regulations are strictly followed in all the pastry area area.
Supervising or mentoring junior pastry and bakery staff when needed and contributing positively to the team culture.
Collaborating with the R&D and production teams to trial, improve and document recipes, and develop innovative products that support gut health.

Requirements:

Proven experience as a Pastry Cook, ideally with a focus on French artisan techniques and long fermentation.
Deep knowledge of natural ingredients, whole foods, and nutrition.
Strong attention to detail and dedication to excellence.
Ability to work efficiently in a fast-paced environment while maintaining a great attitude.
Excellent communication and teamwork skills.
Permanent work rights in Australia.
Availability to work one day of the weekend.
