AVAILABILITY REQUIRED: Monday, Tuesday, Sunday

About the business:
Millstone was first opened by Alice Wright in June 2014. At Millstone, we specialise in creating beautiful seasonal cuisine and delicious French-style Patisserie. We have a huge passion for creating wow-factor dishes, with a strong focus on taste and a farm to platter mentality.

About the Role
As assistant Pastry Chef you will aid in the day to day production and running of the millstone pastry kitchen under our Head Pastry Chef.

Key responsibilities include

Baking off pastries early morning
Decorating cakes, petit gateaux, tarts, and slices for our display cabinet
Masking and decoration of celebration cakes
Preparation and lamination of doughs (croissant, puff pastry, brioche, biscuit and pastry doughs)
Preparing fillings: curds, custards, compotes, jams, creams and glazes.
Thoroughly cleaning pastry kitchen
Basic ordering & stock take

Job Requirements

Compliance with Occupational Heath and Safety requirements in the kitchen. Ensuring a clean workspace for all preparation to take place at Millstone.
Ensuring the quality of produce and all suppliers for Millstone
Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods
Preparing pastry fillings
Knowledge and use of UNOX ovens, while also watching timings and adhering to recipes.
Coordinating the lamination and rolling of Croissant and doughs for cakes.
Glazing buns and pastries, and decorating cakes with cream and custom icings
Operating machines which roll and mould dough and cut biscuits
Emptying, cleaning and greasing baking trays, tins and other cooking equipment
Ability to follow recipes accurately
Experience in yeast dough production preferred
Experience in masking and decorating cakes is essential
Passion and excitement for pastry and a willingness to learn
Multitasking is essential
Time management skills are essential
Able to work independently and shows initiative
A clear understanding and application of HACCP principals

Experience:

Pastry Chef: at least 2 years in the industry(Preferred)

Patisserie Qualification:

Certificate III or IV in Patisserie (Preferred)
