Job Title: Multiple Chef/Cook Positions Available

Salary: between $70,000 to $80,000 per year plus superannuation
About Us: The Royal Hotel Portland is a well-known and popular hospitality venue located in the Great South Coast region. The venue regularly hosts functions and group events. We are seeking multiple passionate and experienced Chef/Cook to join our well-established team.
Chef duties and responsibilities
·Lead menu planning, seasonal menu development, and the creation of daily specials
·Maintain consistent food quality, portion control, and high presentation standards
·Supervise kitchen operations during service periods to ensure smooth workflow and timely food preparation
·Train, mentor, and supervise kitchen staff, fostering a positive and productive team culture
·Prepare and cook high-quality meals in accordance with menu specifications and business standards
·Assist with the preparation and coordination of functions and event catering services
·Monitor stock levels, food rotation, and ordering processes
·Enforce strict food safety and hygiene standards in compliance with all relevant health and safety regulations
Cook duties and responsibilities
·Prepare, cook and present dishes in accordance with established menu specifications and recipes
·Ensure consistency in taste, portioning, quality and presentation
·Examine foodstuffs, season food during cooking, portion food, store food in temperature controlled facilities
·Operate and maintain standard commercial kitchen equipment safely and correctly
·Assist with stock control and minimising food waste
·Maintain a clean, organised, and hygienic work station at all times
·Adhere strictly to all food safety, workplace health and safety, and hygiene regulations
·Collaborate with kitchen and front-of-house staff to ensure smooth service operations
Requirements
·Certificates/Diploma in Commercial Cookery or relevant qualification is required
·A minimum of one year of proven full-time experience working as a Chef or cook
·Proven leadership and team management skills·Sound knowledge of modern cooking techniques, kitchen equipment and food safety/hygiene requirements
·A genuine passion for food and a creative approach to menu development
·Ability to perform well under pressure in a commercial kitchen environment
·Strong communication skills and a high level of personal responsibility
