About Us: Rocketman Ocean Grove is a highly successful and busy coastal café and restaurant located at the heart of the beautiful Bellarine Peninsula. Operating across a diverse all-day breakfast, lunch, and specialty dinner roster, we pride ourselves on our vibrant, high-quality multi-cuisine menu and dynamic kitchen environment. We are currently seeking an experienced, passionate, and dedicated full-time cook to join our elite back-of-house team.

The Role: Working in our fully equipped commercial kitchen, you will play an essential role in preparing and executing our highly regarded breakfast, lunch, and dinner options. From our famous specialty Parmas and premium artisanal burgers to our complex, slow-cooked dinner curries and handcrafted pizzas, you will ensure every plate leaves the pass in perfect condition.

Key Duties & Responsibilities (as per ANZSCO 351411):

Food Preparation: Prepare, season, and cook a wide range of hot and cold dishes to venue standards.
Signature Menu Execution: Maintain superior preparation speeds for signature items, including Gourmet Parmas (Aussie, BBQ, Hawaiian, Spanish, and Italian), artisanal burgers, stone-baked pizzas, and authentic curries (Butter Chicken, Beef Vindaloo, Lamb Rogan Josh, and Goan Fish Curry).
Quality Control: Examine all foodstuffs to monitor absolute premium freshness, quality, and strict portion controls.
Equipment Management: Regulate and safely operate commercial kitchen equipment, including industrial ovens, char-grills, fryers, and pizza stone ovens.
Plating & Presentation: Portion, garnish, and plate items with absolute precision for high-standard visual presentation.
Storage & Inventory: Ensure all stock is handled, cellared cleanly, and stored correctly in temperature-controlled facilities according to health regulations and strict FIFO rules.
Special Diets: Accurately interpret and prepare specialized dietary meals, including Gluten-Free Options (GFO), Vegan (VG), and severe allergen-sensitive variations.
Sanitation: Maintain flawless cleaning regimes and a pristine workspace matching local food safety laws, the Food Act 1984, and internal HACCP plans.
Planning & Training: Coordinate effectively with kitchen leadership to help optimize workflows, estimate stock requirements, and guide or train junior kitchen hands.

Skills & Experience Required:

Qualification: An AQF Certificate III or IV in Commercial Cookery (or verifiable international equivalent).
Experience: A minimum of 2 years of solid, full-time experience in a fast-paced, high-volume commercial kitchen environment.
Technical Mastery: Strong practical command of knife skills, food texturing, and multi-method hot-line cooking techniques.
Compliance Knowledge: Comprehensive understanding of food safety legislation and clean workspace protocols.
Attributes: Excellent stress tolerance under pressure, sharp team-communication skills, and a reliable, self-motivated attitude.
Availability: Full flexibility to work a rotating roster across a 7-day schedule, including mornings, nights, weekends, and public holidays.
