The business provides a range of café, brunch, catering and food products to local customers and clients, with its offering extending across dine-in and takeaway food, coffee, grazing products, salads, breakfast items, desserts, cakes and catering options.
Rush Food & Grazing Co. has a diverse menu and catering offering, including breakfast boxes, brioche sliders, salads, tacos, bao buns, arancini, grazing boxes, desserts, cheesecakes, tiramisu, pavlova and customised cakes. The business also undertakes cake orders for events including birthdays, engagements, weddings, graduations and other functions. As the business continues to service its café, catering and food production requirements, it is seeking an experienced and qualified Chef to support its kitchen operations and maintain consistent food quality across its menu and catering services.
About the Role
Rush Food & Grazing Co. is seeking an experienced Chef to join its kitchen team in Numurkah, Victoria. The successful candidate will be responsible for the preparation, cooking and presentation of a diverse range of modern Australian café and brunch dishes, bakery and dessert products, cakes and catering items in accordance with established recipes, quality standards and customer requirements.
The role requires demonstrated commercial kitchen experience, the ability to manage food preparation across multiple menu categories, and the capacity to maintain consistent food quality, presentation and food safety standards during both regular café operations and busy catering periods.
Key Responsibilities
- Plan and develop menu items in consultation with the business owner and management, including seasonal café, brunch and catering offerings.
- Prepare, cook and present a range of modern Australian café and brunch dishes in accordance with established recipes, portion controls and presentation standards.
- Prepare a range of bakery, pastry, cake and dessert products, including cakes and other items required for café service, customer orders and special events.
- Prepare catering products including salads, grazing items, breakfast products, sliders, savoury items and other food selections according to customer and event requirements.
- Monitor food quality at all stages of preparation and service to ensure consistency in flavour, presentation, texture and portioning.
- Coordinate food preparation across different kitchen sections to ensure timely production and efficient service during breakfast, brunch, lunch and catering periods.
- Manage kitchen inventory, stock rotation and ordering of food supplies and raw ingredients to maintain operational requirements and minimise wastage.
- Monitor food costs and assist with portion control, stock management and waste reduction initiatives.
- Ensure proper handling, storage, labelling and preservation of food products in accordance with food safety and temperature control requirements.
- Maintain compliance with HACCP principles, food safety regulations, hygiene standards and workplace health and safety procedures.
- Supervise, train and support junior kitchen staff and kitchen hands to maintain consistent preparation, hygiene and kitchen standards.
- Assist with staff rostering, task delegation and coordination of kitchen duties across café and catering operations.
- Liaise with suppliers regarding stock availability, deliveries and product quality.
- Plan and coordinate food preparation for catering orders, functions, celebrations and other special events in accordance with customer requirements and operational capacity.
- Monitor customer and catering requirements and adjust food preparation and production schedules to ensure orders are completed accurately and on time.
- Ensure all kitchen equipment is cleaned, maintained and operated safely and efficiently.
Required Skills and Qualifications
Qualification and Employment:
- An AQF Associate Degree, Advanced Diploma or Diploma (ANZSCO Skill Level 2) qualification in Commercial Cookery, Hospitality Management, or a related field.
OR
In lieu of formal qualifications, a minimum of three (3) years of relevant full-time experience as a Chef in a commercial kitchen environment may be considered.
- A minimum of one (1) year of recent relevant full-time experience working as a Chef within a commercial kitchen environment.
Required Skills and Attributes
- Demonstrated experience preparing modern Australian café and brunch-style food in a commercial hospitality environment.
- Experience preparing a diverse range of café, bakery, dessert, cake and catering products.
- Sound knowledge of food safety, HACCP requirements, hygiene regulations and commercial kitchen compliance standards.
- Experience using commercial kitchen equipment and food preparation systems relevant to café, bakery and catering operations.
- Strong leadership and kitchen coordination skills with the ability to supervise and train junior staff effectively.
- Ability to manage food preparation across multiple kitchen sections during high-volume café and catering service periods.
- Strong organisational, problem-solving and time management skills.
- Effective communication and teamwork capability within a commercial kitchen environment.
- Ability to maintain consistent food quality, presentation and portion control across different menu and catering requirements.
- Ability to work independently and under pressure during peak trading periods, including busy café services and catering production.
