Position Summary
The Baker is responsible for producing high-quality bread, pastries, cakes, and other baked goods while ensuring compliance with food safety, hygiene, and workplace health and safety standards. The role involves preparing and baking a variety of products, operating bakery equipment, monitoring production processes, and maintaining product consistency to meet customer expectations and business requirements.
Key Duties and Responsibilities
- Inspect bakery equipment, workstations, and production areas before commencing operations to ensure cleanliness, safety, and compliance with workplace health and safety standards.
- Assess the quality and freshness of ingredients and accurately measure and prepare materials required for daily production.
- Prepare doughs and batters by mixing, kneading, fermenting, portioning, shaping, and moulding products according to established recipes and production schedules.
- Produce a range of bread, rolls, pastries, cakes, and other bakery items while maintaining consistent quality and presentation standards.
- Prepare and cook fillings, toppings, creams, and other components used in bakery and pastry products.
- Monitor baking processes, adjusting oven settings and baking times as required to achieve the desired texture, colour, and quality of finished products.
- Coordinate the production cycle, including product preparation, proofing, baking, cooling, and storage activities to ensure efficient workflow.
- Apply glazes, icings, creams, and decorative finishes to baked products in accordance with product specifications.
- Operate and monitor bakery machinery and equipment used for mixing, rolling, shaping, slicing, and portioning dough and pastry products.
- Maintain bakery tools, trays, tins, and equipment through regular cleaning, sanitising, and preparation for production use.
- Monitor stock levels of ingredients and advise management of ordering requirements to ensure uninterrupted production.
- Ensure compliance with food safety regulations, quality assurance procedures, and company policies at all times.
- Minimise product wastage through efficient production planning and careful use of ingredients.
- Assist with the development and testing of new bakery products and recipes when required.
Qualifications and Experience
The successful candidate must:
- Hold a qualification relevant to Baking equivalent to an AQF Certificate III (including at least two years of on-the-job training) or an AQF Certificate IV; and have at least one year of relevant full-time (or part-time equivalent) work experience; or
- Where formal qualifications are not held, possess at least three years of relevant full-time (or part-time equivalent) work experience in a commercial bakery environment performing duties consistent with the occupation of Baker.
Working Conditions
- Full-time position with a minimum of 38 hours per week.
- Early morning, weekend, and public holiday work may be required based on operational needs.
- Work is performed in a commercial bakery environment involving prolonged standing, lifting, and manual handling activities.
Salary
$65,000 – $80,000 per annum plus superannuation, depending on qualifications, skills, and relevant industry experience.
