About the Role
Nannup Brewing Company is a boutique regional venue located in the heart of the South West. We are looking for an experienced Head Chef to lead our kitchen team, help create menus throughout the week, and deal with supplies and stock management. We are a regional town, and we are looking for someone who lives here, or is willing to move, and to stay with the business for the long term.
Key Responsibilities:
The successful candidate will oversee all culinary operations at the brewery, including:
- Menu Development & Costing: Designing, testing, and costing fresh seasonal menus that align with our craft beers, while maintaining target profit margins
- Kitchen Leadership & Operations: Directing and coordinating daily kitchen service, food preparation, and plating to maintain high standards of quality and consistency. This includes working with junior kitchen staff.
- Supplier & Stock Management: Ordering ingredients, managing inventory, negotiating with suppliers and minimising kitchen wastage.
- Food Safety & Compliance: Enforcing strict Food Safety Standards, hygiene protocols, and workplace health and safety (WHS) regulations across all stations.
- Staff Supervision & Training: Training, scheduling, and supervising kitchen staff and kitchen hands, ensuring efficient workflow during peak service periods. We do get very busy during peak seasons!
Requirements:
To be considered for this position, applicants must meet the following mandatory criteria:
- Formal Education: Australian AQF Certificate IV in Commercial Cookery (or international equivalent trade qualification). An AQF Diploma of Hospitality Management is highly regarded.
- Experience: Minimum of 1–2 years of full-time post-qualification experience as a Chef in a fast-paced commercial kitchen, pub, or brewery environment.
- Technical Skills: Strong expertise in creating menus, inventory control, kitchen roster management, and food cost control.
- Compliance Knowledge: In-depth understanding of Australian food safety standards and HACCP principles.
- Soft Skills: Strong leadership, clear communication, and the ability to work under pressure during high-volume regional trade periods.
