Location: Hearthfire Bellingen
Hours: Early morning production (approx. 3:30am start – 11:45am finish)
Role Purpose
To produce high-quality laminated and non-laminated pastry items as part of a structured pastry team, ensuring all retail and wholesale products are prepared, baked, and ready on time. This role requires strong technical ability, time management, and consistency, with a focus on lamination processes and daily production output.
Key Responsibilities
Pastry Production
Prepare and execute daily pastry items for retail cabinet and wholesale orders
Perform lamination, rolling, shaping, and finishing of croissant dough
Produce consistent, high-quality pastry products across all batches
Lamination & Dough Handling Manage dough condition and temperature for lamination
Execute lamination processes with precision and consistency Adjust workflow based on dough behaviour and environmental conditions
Time & Workflow Management
- Work to strict production timelines (cabinet items → lamination → finishing)
- Prioritise tasks to ensure all products are completed within shift
- Coordinate with ovens role to maintain flow of baked products
- Quality Control
- Monitor proofing, bake, and finish of all pastry products
- Ensure consistency in size, shape, bake, and presentation
- Identify and correct issues early in the process
Cleaning & Organisation
Maintain a clean and organised workstation throughout shift
Complete end-of-shift cleaning to a high standard
Follow all food safety and hygiene procedures
Required Skills & Experience
Proven experience with laminated pastry (croissants, danish, etc.)
Strong understanding of lamination processes and dough handling
Strong understanding of what a finished pastry should look like at each stage (proofed, baked, finished)
Solid pastry knowledge across sweet and/or savoury products
Strong time management and ability to work to deadlines
Ability to work efficiently in a fast-paced production environment
