About Three Blue Ducks x Burradoo Park Farm
Three Blue Ducks at Burradoo Park Farm is a 600-acre working regenerative farm in the NSW Southern Highlands, home to three distinct food venues: The Bakehouse by Three Blue Ducks, The Farmhouse by Three Blue Ducks, and the Three Blue Ducks restaurant, our most elevated dining experience yet. Every one of these venues is shaped by what grows, grazes, and is harvested on-site - and every person in our team is part of that story.
The Restaurant
Three Blue Ducks is opening a new destination restaurant at Burradoo Park Farm in Winter, and we're looking for a strong Sous Chef to join our opening team. Set within a restored 1800s farmhouse, the restaurant will offer an intimate, seasonal dining experience, shaped entirely by what's grown and raised on-site. You'll be working under Group Executive Chef Troy Crisante (formerly co-head chef at three-hatted Quay) and Head Chef Rhys Connell (formerly of three-hatted Sepia), with broader direction from co-owners Darren Robertson and Andy Allen.
We’re looking for a Sous Chef with fine dining or high-quality restaurant experience who takes pride in consistency, detail, and running a professional kitchen - someone who can lead from the front, support the Head Chef, and genuinely get excited about exceptional produce. This is a key leadership role within the kitchen and a rare opportunity to help shape Three Blue Ducks’ most elevated dining experience to date.
What you’ll be doing
Working closely with the Head Chef to deliver a refined, seasonal menu
Leading service with confidence, calmness and strong communication
Mentoring and developing junior chefs, building a high-performing team
Upholding exceptional standards across food quality, prep and presentation
Managing ordering, stock control, and kitchen organisation
Driving a positive, professional and team-focused kitchen culture
What we’re looking for
Proven experience as a Sous Chef in a high-quality or fine dining environment
Strong leadership skills - you know how to lead from the front
A deep respect for produce, seasonality, and technique
High attention to detail and consistency under pressure
Someone who thrives in a structured, professional kitchen
A team player who genuinely cares about the people around them
