The Role
As the Assistant Venue Manager, you'll play a key role in the successful day-to-day operation of Royal Stacks Moorabbin.
This is a hands-on leadership role where you'll lead the team through busy services, support kitchen and front-of-house operations, maintain high operational standards and help drive the venue's sales and profitability targets.
You'll be responsible for ensuring the right people are in the right place at the right time, maintaining strong stock and supplier controls, delivering exceptional customer experiences and creating the energetic Royal Stacks atmosphere our guests know and love.
Whether you're leading a busy service, jumping into the kitchen, supporting the front counter, training new team members, managing stock or engaging with the local community, no two days will be the same.
Key Responsibilities
Team Leadership & Operations
- Lead and motivate the team during daily restaurant operations and peak trading periods.
- Set the standard by leading from the front and maintaining a positive, energetic team culture.
- Support recruitment, onboarding, training and development of team members.
- Conduct pre-service briefings and ensure team members understand daily priorities and targets.
- Maintain high standards of food quality, service, cleanliness, presentation and workplace safety.
- Ensure all operational procedures, food safety requirements and RSA obligations are consistently followed.
- Resolve customer and operational issues quickly and professionally.
Weekly Rostering & Labour Management
- Prepare and manage weekly staff rosters in line with forecast sales, trading patterns and operational requirements.
- Ensure appropriate staffing levels across kitchen, front-of-house and peak trading periods.
- Monitor labour costs and productivity while maintaining excellent customer service.
- Manage team availability, shift changes, leave requests and attendance.
- Identify opportunities to improve labour efficiency without compromising service standards.
Inventory & Stock Management
- Manage daily and weekly inventory levels across food, beverage, packaging and operational supplies.
- Conduct regular stocktakes and investigate variances, wastage and discrepancies.
- Monitor food usage, portion control and wastage to support COGS and profitability targets.
- Ensure stock is correctly stored, rotated and maintained in accordance with food safety requirements.
- Identify upcoming stock requirements and proactively manage inventory levels.
Supplier Goods Ordering
- Prepare and place weekly and ad-hoc supplier orders based on forecast sales, inventory levels and upcoming trading requirements.
- Check deliveries for quantity, quality, freshness and accuracy.
- Manage supplier discrepancies, shortages and damaged goods.
- Maintain strong relationships with suppliers and communicate operational requirements effectively.
- Ensure deliveries are stored correctly and efficiently to minimise waste and maintain product quality.
Sales & Commercial Performance
- Take ownership of driving daily and weekly sales performance alongside the Venue Manager.
- Monitor key commercial KPIs and communicate performance to the team.
- Drive Average Transaction Value (ATV) through effective upselling, suggestive selling and team engagement.
- Encourage team members to promote sides, drinks, desserts, upgrades and other relevant menu items.
- Identify opportunities to increase sales during peak and off-peak trading periods.
- Support promotional campaigns and new product launches.
- Help deliver venue sales and profitability targets.
Local Area Marketing & Community Engagement
- Actively participate in Local Area Marketing (LAM) initiatives to increase awareness and drive traffic to the venue.
- Build relationships with local businesses, schools, sporting clubs, community groups and other organisations.
- Support local events, activations, partnerships and promotional opportunities.
- Identify opportunities to generate new customers and strengthen Royal Stacks' presence within the Moorabbin community.
- Support social media and local promotional activities where required.
- Represent Royal Stacks professionally within the local community.
Customer Experience
- Deliver an exceptional customer experience and ensure every guest receives the Royal Stacks treatment.
- Lead the team in creating a fun, welcoming and energetic restaurant environment.
- Monitor customer feedback and take action to resolve issues and improve the guest experience.
- Maintain the highest standards of food quality, speed of service and restaurant presentation.
What We're Looking For
- Experience in a management or supervisory role within the restaurant, hospitality or fast-casual industry is favourable but not essential.
- Positive, energetic and outgoing personality that naturally engages with customers and the team.
- Confidence leading by example in a fast-paced environment.
- Strong organisational and time-management skills.
- Excellent communication and people skills.
- Commercial awareness and an understanding of sales, ATV, labour, COGS and inventory management.
- Ability to prepare and manage weekly rosters and effectively plan staffing requirements.
- Strong attention to detail and a proactive approach to stock and supplier management.
- A passion for delivering outstanding customer experiences and creating a great vibe for guests.
- Proactive attitude with the ability to take initiative, solve problems and make decisions.
- Willingness to get involved in local area marketing, community events and building relationships with local businesses.
- Ability to work flexible hours, including evenings, weekends and public holidays.
- Current RSA Certificate (essential).
