Jannat Al Mandi is seeking a skilled and motivated Chef to join our kitchen team in Melbourne’s west. The successful candidate will be responsible for planning, preparing and cooking high-quality dishes, maintaining consistency and presentation standards, and contributing to the smooth and efficient operation of the kitchen.
The role will also involve assisting with menu planning, food production, stock control, food-cost management and the supervision and training of junior kitchen staff.

As we continue to grow, we are looking for an experienced Chef to join our team and contribute to our commitment to quality food and exceptional hospitality.
Key Responsibilities
- Prepare and cook a variety of Indo-Arab dishes, including Mandi, Indian curries, tandoori items, biryanis, kebabs, grilled meats, rice dishes, breads, mezze and other Middle Eastern and Indian specialities.
- Prepare ingredients by washing, cutting, trimming, marinating, weighing and portioning according to recipes and production requirements.
- Prepare sauces, gravies, marinades, spice blends, stocks and other kitchen components.
- Follow established recipes and maintain consistency in taste, quality, portion size and presentation.
- Monitor cooking processes and adjust temperatures, cooking times and seasoning as required.
- Assist with menu planning and development, including suggesting new Indo-Arab dishes and seasonal menu items.
- Estimate food requirements and assist with ordering, stock control and inventory management to minimise wastage.
- Maintain appropriate portion control and food-cost standards.
- Check the quality and freshness of ingredients and ensure appropriate food storage, labelling, temperature control and stock rotation.
- Operate commercial kitchen equipment safely and efficiently, including ovens, grills, tandoors, fryers, cooking ranges, mixers and food processors.
- Coordinate with kitchen staff to ensure meals are prepared and served within required service times.
- Maintain high standards of food safety, hygiene, cleanliness and workplace safety.
- Assist with training, supervising and coordinating junior kitchen staff where required.
- Manage multiple preparation and cooking tasks effectively during busy service periods.
- Ensure all dishes are prepared and presented according to the restaurant’s quality and presentation standards.
- Report food shortages, equipment faults, quality issues and other operational matters to the Head Chef or Restaurant Manager.
Qualifications & Experience
- Certificate IV in Commercial Cookery or an equivalent relevant qualification.
- Minimum one year of relevant experience in a commercial kitchen.
- Experience with Indo-Arab, Middle Eastern or similar cuisine is highly regarded.
- Proven ability to prepare and cook high-quality dishes consistently.
- Strong understanding of food safety, hygiene, kitchen organisation and stock control.
- Ability to assist with menu planning and manage food preparation requirements.
- Ability to train, supervise and coordinate junior kitchen staff in a busy service environment.
- Strong communication, teamwork, organisational and problem-solving skills.
- Ability to work efficiently in a fast-paced restaurant environment.
- Availability to work flexible hours, including evenings, weekends and public holidays.

Pay: $80,000.00 – $85,000.00 per year
