What you can expect in this role:
As Head Chef, you’ll lead a fast-paced and supportive kitchen environment, ensuring the consistent delivery of high-quality dishes. You’ll take ownership of the preparation, cooking, and presentation of our signature menu, including premium steaks and seasonal local produce, as well as offerings across in-room dining, Birdcage Bar, and the Members Lounge. Through a hands-on leadership approach, you’ll drive standards, support your team through service, and ensure every dish reflects the quality and experience our guests expect.
Your key responsibilities will include:
- Oversee day-to-day kitchen operations, setting priorities and managing workflow to deliver smooth, efficient service
- Manage food costs, stock control, and labour to ensure the kitchen operates within budget while maintaining quality
- Support reporting and forecasting, including analysing food costs and tracking performance against targets
- Lead, coach, and develop your team, providing hands-on guidance and training to ensure consistency and high standards
- Collaborate with the Executive Chef to develop menus and offerings, keeping up to date with food trends and customer preferences
- Identify opportunities for continuous improvement, driving efficiencies and enhancing the overall guest experience
- Ensure full compliance with food safety standards, safe work practices, and company policies
What you will bring to the role:
- Proven experience leading a high-volume kitchen or similar environment
- Strong commercial acumen, with demonstrated success managing food costs, labour, and performance targets
- A hands-on leadership style with the ability to inspire, coach, and develop teams
- A passion for quality produce and delivering consistent, high-standard service at scale
- Experience with grill and cooking over fire is highly regarded
- Certificate III in Commercial Cookery or higher
