Head Chef – Premium Waterfront Restaurant
VANTA QUAY is preparing to open one of Mandurah's newest premium waterfront dining destinations, and we are looking for an experienced Head Chef to lead our kitchen from day one.
Located on the Mandurah Foreshore, VANTA QUAY offers a sophisticated dining experience featuring premium steaks, fresh seafood, wood-fired pizzas, handmade pasta, Mediterranean and Modern Australian cuisine, signature desserts, premium cocktails and an extensive beverage selection.
This is an exciting opportunity to join a brand-new venue where you will play a key role in building the kitchen team, developing seasonal menus and establishing one of the region's leading restaurants.
Your Responsibilities
- Lead all day-to-day kitchen operations
- Recruit, train and mentor kitchen staff
- Deliver consistently high-quality food and presentation
- Develop seasonal menus, specials and new dishes
- Manage food costing, stock control and ordering
- Build strong supplier relationships
- Ensure compliance with all food safety and hygiene regulations
- Maintain kitchen cleanliness and organisation
- Prepare staff rosters and manage labour costs
- Work closely with management to achieve business goals
- Maintain a positive, professional and team-focused kitchen culture
About You
To be successful in this role you will have:
- Previous experience as a Head Chef or Senior Sous Chef
- Strong leadership and communication skills
- Experience in premium restaurant environments
- Passion for quality food and attention to detail
- Experience with Mediterranean, Italian or Modern Australian cuisine
- Strong knowledge of food costing and kitchen management
- Ability to perform under pressure in a busy service
- Excellent organisational and time management skills
- Food Safety Supervisor Certificate (preferred)
- Full Australian working rights
