Job Summary:
In this role, you will be responsible for planning, preparing and cooking high-quality Italian and Mediterranean dishes, including the daily preparation of fresh pasta and seasonal menu items. You will work closely with the Venue/ Assistant Venue Managers, Executive Chef, Head Chef and kitchen team to ensure efficient food production, consistent presentation, effective kitchen supervision and compliance with food safety, hygiene and WH&S standards.
Key Responsibilities:
- Plan, direct and supervise food preparation and cooking activities to ensure consistently high-quality dishes are produced.
- Prepare and cook a range of authentic Italian and Mediterranean dishes, including fresh pasta, sauces, entrees, mains and function menu items.
- Collaborate with the Managers and senior kitchen staff to plan menus, daily specials and seasonal dishes.
- Create new dishes, standardise recipes and teach preparation methods to other kitchen staff.
- Supervise, train and delegate tasks to kitchen staff, trainees and apprentices to support efficient service.
- Estimate food and labour requirements and assist with ordering, stock control and supplier coordination.
- Monitor food quality, portion control and presentation standards before dishes are served.
- Prepare food to meet special dietary requirements and customer requests where required.
- Control food wastage and assist with cost management while maintaining menu quality.
- Ensure the kitchen, equipment and food storage areas are maintained in a clean, organised and safe condition.
- Ensure food safety, hygiene and Occupational Health and Safety standards are followed at all times.
Skills & Qualifications:
- Formal qualifications as a Chef and at least 12 months of demonstrated experience working as a Chef.
- Strong experience in Italian and/or Mediterranean cuisine, including fresh pasta preparation.
- Ability to plan menus, develop recipes and assist with food costing and stock control.
- Ability to lead, train and motivate kitchen staff in a fast-paced restaurant environment.
- Strong attention to detail, presentation and consistency in food preparation.
- Sound understanding of food safety, hygiene and WH&S requirements.
- Highly developed communication, teamwork and organisational skills.
- Ability to work unsupervised and manage competing kitchen priorities during service.
