Full Job Description

SOUS CHEF – NEWCASTLE NSW

Surly's Hospitality Pty Ltd is seeking an experienced and motivated Sous Chef to join our team at our newly opened Newcastle venue.

Surly's is a well-established hospitality group known for authentic American BBQ, smoked meats, premium burgers, live music, sport and a strong focus on guest experience. Following the success of our Sydney venue, we are expanding into Newcastle and are seeking a skilled Sous Chef to help lead kitchen operations and support the continued growth of the business.

Salary: $80,000 per annum plus superannuation

Employment Type: Full-Time

Location: Newcastle, NSW

Key Responsibilities

Assist the Head Chef with day-to-day kitchen operations
Lead kitchen service during trading periods and functions
Supervise, train and mentor junior kitchen staff
Ensure food quality, consistency and presentation standards are maintained
Assist with menu development, specials and seasonal offerings
Monitor stock levels and assist with ordering and inventory control
Manage food cost, portion control and minimise wastage
Ensure compliance with food safety, WHS and kitchen hygiene standards
Coordinate preparation and service of smoked BBQ meats and American-style menu offerings
Support rostering and labour management requirements

Skills and Experience

Minimum three years' experience in a commercial kitchen environment
At least one year experience in a supervisory or leadership position
Relevant trade qualification in Commercial Cookery or equivalent
Strong understanding of kitchen operations, food safety and compliance requirements
Experience working in high-volume hospitality venues
Ability to lead and motivate a team in a fast-paced environment
Strong organisational and communication skills
Experience with American BBQ, smoked meats or large-format food production will be highly regarded

Essential Requirements

Certificate III in Commercial Cookery or equivalent qualification
Availability to work evenings, weekends and public holidays as required
Strong English communication skills
Ability to work effectively under pressure
