Full Job Description

The Role:
At Fully Baked Pty Ltd we pride ourselves on using traditional techniques, milling our own grains, and sourcing the finest ingredients to create products that reflect our commitment to excellence and sustainability. We are seeking a passionate and experienced baker with specialised skills in artisanal breadmaking. As a key member of our team, you will play a vital role in creating our breads and pastries.

Key Responsibilities:

Bread Production:

Produce high-quality breads through forming, loading, baking, unloading, and cooling processes.
Adhere to recipes and maintain consistency in product quality.

Mixing & Baking:

Combine ingredients to prepare doughs and mixes for bread.
Bake and monitor products to ensure optimal results.

Grain Milling:

Mill various grains and cereals in-house to produce flours and meals used for artisanal production under the direction of senior staff.

Equipment Operation:

Operate large kitchen machines including mixers, ovens, and dough-forming equipment.

Quality Assurance:

Monitor products to ensure they meet our high-quality standards.
Implement and adhere to HACCP protocols and food safety regulations.

Reporting & Issue Resolution:

Report any production or equipment issues to management promptly.

Training & Development:

Train junior team members and apprentices to meet production targets and maintain our quality.

Skills & Qualifications

Experience:

Minimum of 2 years’ experience in a high-volume production kitchen or restaurant environment as a baker.
Experience in stone milling and sourdough fermentation techniques.

Knowledge:

Strong understanding of raw materials and the production of baked goods from grains to finished products.
Detailed knowledge of bread fermentation and traditional baking techniques.

Technical Skills:

Proficiency with commercial bakery equipment, such as mixers and ovens.
Ability to plan, meet, and manage daily production targets.

Other Requirements:

Keen attention to detail, particularly in maintaining consistent quality.
Excellent time management and multitasking in a fast-paced environment.
Strong communication and teamwork skills.
Flexibility to work rotating shifts, including nights and weekends.
Commitment to health and safety, particularly HACCP and WH&S protocols.

Success Metrics:

Consistent product quality and adherence to production schedules.
Effective collaboration with the production team and management.
Proactive in identifying and resolving production-related issues.
