Skills and Experience required for the position
· AQF Certificate III including at least two years of on-the-job training, or AQF Certificate IV (ANZSCO Skill Level 3) in Commercial Cookery or highly relevant fields, or at least three years of relevant experience in substitution for the formal qualifications
· You must have at least one year full-time relevant work experience as a cook or in a related field.
Duties
· Plan, prepare, season and cook meats, poultry, seafood, vegetables, rice, noodle, soup, fruits, sauces and other kind of food using multiple cooking techniques including but not limited to knife work, temperature-controlled deep-frying, simmering, preparing sauces, marinades, dressings and broths from scratch and plating;
· Prepare, cook and present different kinds of appetisers, salads, noodle dishes, rice dishes, meat and curry and so on;
· Maintain food production records;
· Assist the chef/s in assessment of food and supplies needed;
· Responsible for checking and examining quality of food and supplies when necessary;
· Responsible for keeping goods in correct temperature and all stock have to be labelled and dated;
· Control food rotation and make sure all goods are FIFO(First In First Out);
· Responsibility for checking and ordering when required;
· Maintain highest standards of food, workplace and personal hygiene;
· Supervise the cleaning of kitchen, kitchen utensils and other special equipment, secure refrigerator and freezer;
· Follow Chopstix Noodle Bar Apollo Bay’s recipes to cooking dishes and perform specialised cooking duties to meet customer request;
· Assist the chef to training others when necessary;
