Full Job Description

SOHO Miine Pty Ltd t/as Miine Newcastle, is an Italian restaurant located in Newcastle, NSW,

committed to delivering an authentic Italian dining experience using high-quality, fresh ingredients

and traditional cooking methods. Our kitchen team is passionate about crafting dishes that reflect

the regional diversity of Italian cuisine.

The Cook will work under the direction of the Head Chef to prepare and cook a range of Italian

dishes across all sections of the kitchen. The successful candidate will bring demonstrated

experience in Italian cuisine, a strong commitment to food quality and safety, and the ability to

perform effectively in a fast-paced kitchen environment.

Key Duties and Responsibilities

Prepare, cook and present a range of Italian dishes including pasta, risotto, antipasti,

secondi and dolci in accordance with established recipes and menu standards.

Set up, operate and clean kitchen equipment, utensils and workstations in compliance with

food safety and hygiene regulations.

Portion and present food to the standard required by the Head Chef, ensuring consistency of

quality and presentation.

Monitor stock levels, assist with ordering and rotation of ingredients, and minimise food

wastage.

Maintain compliance with food safety standards under relevant NSW legislation, including

temperature monitoring and hazard identification.

Collaborate with the broader kitchen team to ensure efficient service and smooth kitchen

operations during peak periods.

Contribute to a clean, organised and safe kitchen environment at all times.

Assist the Head Chef in supervising and training other kitchen staff, including demonstrating

cooking techniques, monitoring work standards and providing on-the-job guidance to junior

team members.

Required Skills and Qualifications

A level of skill commensurate with an AQF Certificate III including at least two years’ on-the-

job training or AQF Certificate IV or

At least three years of relevant experience in lieu of qualifications.

At least one year of relevant experience in addition to relevant qualifications.

Demonstrated proficiency in Italian cooking techniques, including fresh pasta making, sauce

preparation and traditional Italian methods.

Sound knowledge of food safety and hygiene standards

Ability to work efficiently under pressure and meet the demands of a busy restaurant service.

Strong communication skills and ability to work collaboratively within a kitchen team.

Pay: $75,000.00 – $80,000.00 per year
