Fellini’s Trattoria is seeking a passionate and talented Full-time Head Chef to join our kitchen team at Howard Smith Wharves in Brisbane, Australia. Known for our vibrant atmosphere and warm Italian hospitality, Fellini’s offers guests a refined yet relaxed experience from morning through to late evening.
We’re looking for a Head Chef who thrives in a fast-paced environment, takes pride in delivering consistently high-quality dishes, and brings energy and professionalism to every service.
This is a Full Time position working 38 hours per week.
Key Responsibilities:
· Set and execute the culinary vision in alignment with the venue’s brand, positioning, and business goals to drive a distinctive and memorable dining experience
· Lead kitchen operations as a business unit, ensuring productivity, profitability, and alignment with financial targets through effective cost control, supplier negotiations, and menu engineering
· Design innovative, seasonal, and commercially viable menus that reflect guest insights, evolving trends, and margin performance, while upholding quality and consistency
· Develop and lead a high-performance kitchen team, embedding a strong leadership culture through coaching, succession planning, and talent development initiatives
· Champion a culture of accountability, safety, and compliance, ensuring all food safety (HACCP), WHS, and company standards are consistently met or exceeded
· Leverage operational data and guest feedback to evaluate performance, make evidence-based decisions, and drive continuous improvement in culinary delivery and guest satisfaction
· Collaborate cross functionally with venue management, marketing, and front-of-house teams to support promotions, events, and brand campaigns through creative food offerings
· Manage and optimise kitchen P&L performance, including food and labour costs, yield, waste, and productivity benchmarks
· Implement systems, procedures, and reporting structures that support scalable growth, team efficiency, and quality assurance across services
· Lead sustainability and innovation efforts in procurement, waste management, and sourcing to support brand values and environmental responsibility
What we are looking for:
· 3 years' experience in a high-volume commercial kitchen
· Strong culinary skills with the ability to run a section independently and consistently meet quality and presentation standards
· Solid understanding of food safety, hygiene, HACCP compliance, and WHS practices
· Menu planning experience
· Certificate III or IV in Commercial Cookery (or equivalent trade qualification)
· Current Food Safety Supervisor certification
