Greek’n Out is a vibrant Mediterranean dining destination located in the iconic South Melbourne Market, known for fresh flavours, fast-paced service, and a strong focus on customer experience.

We are seeking an experienced, energetic, and commercially minded Restaurant Manager to take ownership of the venue’s day-to-day operations, team leadership, customer experience, and local business growth.

This is a hands-on leadership role suited to someone who leads from the front, thrives in a high-energy hospitality environment, and takes genuine pride in operational excellence.

The Role

Reporting directly to ownership, you will be responsible for the overall daily performance of the venue, ensuring exceptional service standards, smooth operations, strong team culture, and ongoing business growth.

Key Responsibilities

Operations & Leadership

Oversee all day-to-day restaurant operations to ensure efficient and smooth service
Lead, train, mentor, and motivate front and back-of-house teams
Manage recruitment, onboarding, rostering, team development, and performance management
Ensure exceptional customer service standards and effective resolution of customer concerns
Monitor labour costs, productivity, stock control, ordering, and operational efficiency
Maintain compliance with food safety, RSA, workplace health & safety, and venue procedures

Hands-On Venue Management

Lead from the floor during service periods and busy trading times
Actively support daily operations to maintain smooth service flow and high presentation standards
Assist with floor coordination, guest engagement, venue presentation, table organisation, and overall service excellence
Maintain a strong presence on the floor and ensure operational standards are consistently upheld

Marketing & Business Growth

Drive local area marketing initiatives, promotional campaigns, and customer engagement activities
Work closely with ownership to develop strategies that increase foot traffic, repeat business, and overall revenue
Support social media promotions, community engagement, seasonal campaigns, and partnership opportunities
Monitor guest feedback, customer trends, and identify opportunities for growth and improvement

About You

You are a confident hospitality professional who combines strong operational leadership with commercial awareness and a genuine passion for customer experience.

You will ideally bring:

Proven experience in a Restaurant Manager, Venue Manager, or Hospitality Operations leadership role
Strong experience in team leadership, hiring, rostering, coaching, and performance management
Excellent communication, organisational, and problem-solving skills
A proactive, energetic, and hands-on management style
Ability to perform under pressure in a fast-paced, high-volume environment
Strong understanding of hospitality operations, cost control, and customer service excellence
Experience in local area marketing or hospitality business growth initiatives

Essential Requirements

Current RSA certificate
Food Safety / Food Handling certification
Full Australian working rights
Proven hospitality management experience with a strong operational track record
Experience in Greek, Mediterranean, or similar fast-paced casual dining concepts
Experience managing within a market, food precinct, or high-foot-traffic hospitality environment
Familiarity with POS systems, delivery platforms, and operational reporting
