Position Description: Pastry Chef Assistant - Production
Reports to: Food Production Manager and Manager Director
Based at: Unit 6/13 James St, Bayswater
The Role and Job Purpose:
We are looking for a reliable, hard working Pastry Chef Assistant to join our team on a full time basis.
You will assist in the preparation and assembly of products, package and quality control all product lines produced by hand in this position. You will learn how to make our signature high end products including Pastizzi (Maltese gourmet pastry canapes) gourmet Canapé Pastries, unique Zoppis Sausage Rolls, Shortcrust Pies, Pizza Products including our famous NEW Range of Strombolis and Gluten Free and Vegan Cakes and Slices and Savoury Range.
We also have the addition of an automated pie machine so your experience in operating a Simple Simon pie machine previously will be advantageous but not essential as full training will be provided.
To adhere at all times to our HACCP Food Safety Plan with regard to how all steps of the process in making these products are carried out effectively, consistently and safely without compromising product.
To assist daily cleaning and sanitising duties when necessary.
To meet daily production targets.
Key Responsibilities and Accountabilities:
- Adhere and follow HACCP procedures at all times
- Cooking and preparing fillings
- Chopping, weighing and preparing ingredients
- Assemble by hand Products
- Pastry Production for Pie manufacture
- Packing and labelling frozen Product in boxes for delivery
- Report any problems noted regarding procedures.
- Follow chemical safety guidelines at all times when necessary
- Safely operate kitchen equipment such as ovens, stoves, blast freezer, mixers, pie machine etc.
- Quality controlling the process of producing finished products
- General cleaning of kitchen
- Completing daily records as part of our HACCP plan and assure they are accurate and up to date at all times
To be Successful you will have:
- Qualification in hospitality - Certificate III in Commercial Cookery or other qualification such as Pastry Chef or Baker.
- Previous experience working in a HACCP environment
- Minimum 2 Years experience working in a Commercial Kitchen

- Prioritise/organise tasks effectively
- High level of personal hygiene
Key Performance Indicators:
- The following of our HACCP Food Safety Plan policy and procedures, ensuring all procedures are followed and all records are up to date and accurate
- All production targets are to be completed by said completion times
- Uniform is to be fully compliant at all times
- All tasks to be completed in a timely manner
- Ensure the quality of all products are of the highest standard at all times
- Ensure kitchen equipment, utensils and surrounds are maintained daily
- Demonstrate high level of cleanliness
- Demonstrate courtesy and respect for your team members at all times
