Full Job Description

We’re a hatted Japanese restaurant in Zetland looking for a sharp, calm, fast-thinking Assistant Manager to join our floor leadership team.

This is a role for someone who doesn’t just “work service” but runs it - someone who stays composed when the floor is busy, keeps standards tight and brings structure and energy to the floor without losing control.

We are not casual and we are not rigid - we operate at a high standard, high pace and high consistency level of dining.

What we’re looking for :

Minimum 2 years’ experience in fine dining as a similar role
Strong leadership skills - clear, calm and hands-on
Excellent communication is essential
Solid wine & beverage knowledge (must)
Sake knowledge preferred, not essential
Confident managing sections, teams and service flow under pressure
Polished, well-presented and detail-focused
Someone who sets the tone through attitude and standards, not just words
