The opportunity

Delaware North Australia is hiring a full-time Sous Chef to join our premium dining team at the iconic Melbourne Cricket Ground (MCG). As a Sous Chef working in our premium dining department, you will support the culinary team in delivering an excellent standard of food quality and presentation. What will you do?

Oversee daily culinary operations within our premium dining environment, ensuring high‑volume production meets quality standards for events and daily service
Support food safety plans and maintain HACCP accreditation standards, advocating for on‑site compliance across kitchens
Assist in managing departmental budgets, controlling food costs, and coordinating with suppliers to source high‑quality ingredients for premium dining menus
Collaborate with the Head Chef and General Manager on menu development, addressing guest feedback and resolving service‑related issues

More about you

Diploma in Professional Cookery Level 5 or equivalent, and minimum Certificate III in Commercial Cookery
Food Safety Supervisor Certificate (desirable)
Previous experience working in a premium dining environment, ideally within high‑volume or event‑driven operations
Minimum of 3 years’ experience monitoring food and labour costs, menu development, and costing
Proven background in ordering and inventory procedures, including cost controls and invoice handling
Proficiency in menu development and stock management
Competence using business technology, including stock control systems, spreadsheets, and accounting systems (preferred)
