Full Job Description

ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback.

You will be based in regional NSW working at one of our remote mine site villages, cooking for a minimum of 300 residents.

Head Chef position on a remote mine site
This is a on the tools, hands on position
14 days on 7 days off, 10 hour days, salary range of $110,000 - $115,000 + Superannuation
Full time permanent employment
FIFO from Sydney, Melbourne

The Position:

Lead all kitchen operations for breakfast, crib & dinner service providing buffet/ bulk cooking options
Manage & mentor a team of chefs, kitchen hands & dining room staff
Oversee stock control, ordering & food safety compliance
Ensure food is always prepared to a high standard
Ensure OH&S compliance, adhering to safe work practices & procedures.
Ensure all catering controls are in place, & wastage is kept to a minimum.
Maintain high standards of food hygiene, safety, infection control & cleanliness in accordance with Compass standards.
Enhance workplace culture – display high levels of customer service, contribute ideas & be flexible to meet the needs of the business.

The Person:

Hold an Australian Trade Certificate III in Commercial Cookery as a minimum
Food Safety Supervisors Certificate - desired
Hold a white card
Must be reliable, strong & capable of leading a team
Proven experience as a head chef or sous chef in mining or remote settings
Excellent communication & leadership skills
Experience within bulk catering/ cooking environments
Excellent knowledge of all kitchen procedures & operations
Experience in menu writing, stock control, budgets, rostering, staff mentoring, training & liaising with the client.
Experience with hygienic work practices and appropriate HACCP guidelines
A proactive leader who is professional, positive, supportive, & motivated with experience in training, and developing a team of hospitality professionals
