Qualifications Required:
Certificate III or higher qualification in Cookery or equivalent qualification.
Experience Required:
At least 3 years of relevant experience in cooking role is required. Experience gained as a Kitchen Hand or Restaurant Manager will not be considered as relevant cooking experience.
Applicants with experience in Japanese or Korean cuisine will be highly regarded.
Job Description:
The Cook will be responsible for preparing, cooking and presenting hot food menu items while ensuring food quality, food safety compliance and efficient kitchen operations. The Cook will also assist with the preparation of ingredients used by the sushi team and will work closely with the owner to monitor stock levels and order supplies.
Duties and Responsibilities:
The position’s duties include but not limited to:
- Prepare, cook and present a variety of hot food items in accordance with the business’ recipes and quality standards.
- Prepare ingredients by washing, cutting, marinating, seasoning and portioning food prior to service.
- Monitor cooking times and temperatures to ensure food is cooked consistently and safely.
- Ensure all meals are prepared and served promptly during busy service periods.
- Maintain food quality, presentation and portion control to ensure consistency across all menu items.
- Assist with planning daily food production based on customer demand and stock availability.
- Monitor stock levels and notify management when ingredients and kitchen supplies require replenishment.
- Receive, inspect and correctly store food deliveries in accordance with food safety requirements.
- Rotate stock using FIFO (First In, First Out) principles and minimise food wastage.
- Maintain a clean, organised and hygienic kitchen by cleaning workstations, equipment and food preparation areas throughout each shift.
- Ensure compliance with all food safety, sanitation and workplace health and safety regulations.
- Assist with the development of new menu items and suggest improvements to existing dishes where appropriate.
- Work collaboratively with other kitchen and front-of-house staff to ensure efficient service for both takeaway and seated customers.
- Report equipment faults, food quality issues or safety concerns to management promptly.
- Perform other kitchen-related duties as reasonably directed by management.
Pay: $80,000.00 per year
