We are seeking a skilled and passionate Indian Cuisine Cook to join our culinary team. In this role, you will be responsible for preparing, seasoning, and cooking a wide range of authentic Indian dishes, including traditional curries, tandoori items, biryanis, and street food. The ideal candidate will have a deep understanding of Indian spices, traditional cooking techniques, and the ability to work efficiently in a high-volume kitchen while maintaining exceptional quality and food safety standards.
Key Responsibilities & Duties
- Food Preparation: Measure, mix, and prep fresh ingredients, including meats, vegetables, and complex spice blends (masalas).
- Authentic Cooking: Prepare traditional North and/or South Indian dishes according to standard recipes, ensuring consistent flavor, texture, and presentation.
- Station Management: Operate specialized kitchen equipment, including the Tandoor (clay oven), heavy-bottomed kadais, and flat-top tawas.
- Curry & Sauce Mastery: Expertly slow-cook base gravies (onion-tomato, cashew, korma) and adjust spice levels perfectly to meet customer preferences.
- Quality Control: Taste food throughout the cooking process to ensure correct seasoning and flavor profile before serving.
- Kitchen Safety & Hygiene: Maintain a clean, sanitized, and organized workstation. Strictly adhere to health department regulations and food safety protocols.
- Inventory & Storage: Properly label, date, and store all food items using the First-In, First-Out (FIFO) method to minimize waste.
Required Skills & Qualifications
- Experience: Minimum of [2] years of professional cooking experience, specifically focusing on Indian cuisine (restaurant or catering environment).
- Technical Expertise: Strong knowledge of traditional Indian cooking techniques (tempering/tadka, tandoor roasting, and dum cooking).
- Spice Literacy: Deep understanding of the flavor profiles of Indian whole and ground spices, and how heat alters them.
- Speed & Stamina: Ability to work quickly and maintain focus in a fast-paced, high-heat kitchen environment. Ability to stand for long periods.
- Certifications: Valid Food Handler’s Card / Food Safety Certificate required.
- Teamwork: Excellent communication skills and a collaborative mindset to work seamlessly with the front-of-house staff.
