About the role
Divine Darbar Indian Restaurant, located in the heart of Carlton, is seeking a skilled and enthusiastic Cook / Chef to join our professional kitchen team. We are a well-regarded venue known for serving high-quality, authentic Indian cuisine and providing excellent service. This is a great opportunity for a dedicated Cook/Chef who is passionate about Indian cuisine and enjoys working in a busy, professional kitchen environment.
CHEF – Key Duties and Responsibilities
· Plan and develop menus, including creating and updating dishes to meet customer preferences and seasonal availability.
· Prepare, season, and cook authentic Indian cuisine to a consistently high standard.
· Monitor the quality of dishes at all stages of preparation, cooking, and presentation.
· Supervise, train, and coordinate kitchen staff to ensure efficient kitchen operations.
· Estimate food requirements, order supplies, and manage inventory and stock control.
· Monitor food and labour costs and implement measures to minimise wastage.
· Ensure compliance with food safety, hygiene, and workplace health and safety regulations.
· Develop new recipes and maintain consistency in food quality and presentation.
COOK – Key Duties and Responsibilities
· Prepare and cook a variety of authentic Indian dishes in accordance with recipes and quality standards.
· Prepare ingredients, including cutting, marinating, portioning, and cooking food for service.
· Ensure meals are prepared and presented consistently to restaurant standards.
· Monitor food quality and maintain appropriate portion control.
· Receive, store, and rotate stock in accordance with food safety requirements.
· Maintain cleanliness and sanitation of kitchen equipment, utensils, and work areas.
· Assist with stock control and report ingredient requirements to the Chef.
· Follow all food safety, hygiene, and workplace health and safety procedures.
Selection Criteria
· Relevant commercial cookery qualification or equivalent industry experience.
· Minimum 2 years of relevant experience in the nominated occupation.
· Strong knowledge of Indian cuisine and commercial kitchen operations.
· Ability to work efficiently in a fast-paced team environment.
· Excellent organisational and communication skills.
· Availability to work weekends, evenings, and public holidays.

Pay: $75,000.00 – $85,000.00 per year
