Head Chef – Catering Kitchen

Miami Fish Market is seeking a qualified, organised and commercially minded Head Chef to lead our growing “Catering and Take Home Meals” kitchen.
The successful candidate will develop and produce a premium range of restaurant-quality seafood dishes to enjoy at home. Menus will draw inspiration from cuisines around the world, with a particular focus on European and Asian flavours.
The Role
This is a hands-on Head Chef position responsible for:
- Leading the daily preparation and production of catering and take-home meals
- Developing new menu items, recipes and seasonal specials
- Producing premium seafood dishes to consistent quality standards
- Completing recipe and menu costings to ensure dishes meet quality, margin and pricing targets
- Managing ordering, stock levels, portion control and food wastage
- Planning production around retail demand, catering orders and peak periods
- Identifying opportunities to utilise seasonal and surplus ingredients profitably
- Maintaining food safety, storage, cleanliness and compliance standards
- Coordinating kitchen workflow and supervising team members
- Preparing food for functions, catering orders and higher-volume production
- Working closely with management to grow the commercial performance of the division
About You
The ideal candidate will have:
- Formal qualifications in Commercial Cookery or Kitchen Management
- Experience in a fast-paced restaurant, hotel or commercial kitchen
- Experience preparing seafood and working across a varied menu
- Strong ordering, stock-control and production-planning skills
- Experience with functions, banqueting or high-volume food preparation
- Knowledge of international cuisines, particularly European and Asian flavours
- Strong numerical skills and an understanding of recipe costing, food margins and cost control

- The confidence and ambition to take ownership of a growing kitchen
Qualifications or experience in finance, business or commercial management will be highly regarded.
Previous Head Chef experience is welcomed; however, we are also open to a qualified and capable chef ready to step into their first Head Chef position.
This is a full-time role and may include evening, weekend and public-holiday work.
