We are seeking a highly experienced Chocolatier to join our team and play a key role in the continued evolution of the Red Cacao brand.

About the Role
As Senior Chocolatier, you will be responsible for overseeing and contributing to all aspects of chocolate production, from product development and seasonal collections through to daily manufacturing and quality control.
Working closely with the leadership team, you will help drive innovation while ensuring the highest standards of craftsmanship, consistency, and presentation across our product range.
You will bring both technical expertise and creative vision, helping Red Cacao continue to deliver exceptional chocolate experiences for our customers.
Key ResponsibilitiesChocolate Production & Quality
- Lead the production of handcrafted chocolates, bonbons, truffles, bars, seasonal products, and specialty collections.
- Ensure consistent product quality, flavour, texture, and presentation across all product lines.
- Maintain exceptional standards in tempering, moulding, enrobing, decorating, and finishing techniques.
- Oversee production planning to meet retail, wholesale, online, and seasonal demand.
- Monitor and maintain quality control procedures throughout the production process.
Product Development & Innovation
- Develop new chocolate products, flavour combinations, and seasonal collections.
- Research emerging trends, ingredients, and techniques within the premium chocolate sector.
- Contribute creative ideas that align with Red Cacao's commitment to sustainability, quality, and customer experience.
- Collaborate on limited-edition ranges, gifting collections, and special projects.
Leadership & Operations
- Support and mentor junior production team members.
- Assist with workflow planning and production efficiencies.
- Maintain high standards of food safety, hygiene, and workplace safety.
- Contribute to a positive, collaborative, and quality-focused workplace culture.
- Assist with ingredient sourcing and supplier relationships where required.
About You
You are an accomplished chocolatier with a deep understanding of chocolate craftsmanship and a passion for creating products of exceptional quality.
You combine technical precision with creativity and take pride in every detail of the finished product. You thrive in an environment where innovation, sustainability, and craftsmanship are valued.
Skills & Experience
- Extensive experience as a Chocolatier in a premium artisan, boutique, or specialty chocolate environment.
- Advanced knowledge of chocolate production techniques, including tempering, moulding, enrobing, ganaches, pralines, and decorative finishing.
- Strong understanding of ingredient functionality, shelf life, and quality control.
- Experience developing new products and seasonal collections.
- Excellent organisational and production planning skills.
- Ability to maintain exceptional standards under varying production demands.
- Strong communication and team collaboration skills.
- Commitment to continuous improvement and craftsmanship.
Highly Regarded
- Formal qualifications in pastry, confectionery, or chocolate arts.
- Experience with bean-to-bar, single-origin, or ethically sourced chocolate programs.
- Experience mentoring or supervising production teams.
- A strong interest in sustainability, provenance, and responsible sourcing.
- Experience working within premium gifting or luxury food brands.
