We are seeking an experienced and inspiring Executive Sous Chef to join our Culinary Leadership Team and play a pivotal role in shaping the future of our food offering.
This is a unique opportunity to lead some of the largest and most dynamic culinary operations in Western Australia, with direct responsibility for Banquets, Cold Larder, Commissary Production, and the Staff Canteen , while driving operational excellence, team performance, and culinary innovation across these high-volume areas.
About the Role
Reporting to the Culinary Director, the Executive Sous Chef will oversee a diverse portfolio of kitchen operations, leading a team of senior culinary professionals to deliver exceptional food experiences, operational efficiency, and commercial success.
You will:
- Lead and oversee Banquets, Cold Larder, Commissary and Staff Canteen operations
- Drive culinary excellence across high-volume and large-scale food production environments
- Mentor, coach and develop Chef de Cuisines and senior kitchen leaders
- Manage labour costs, food costs, budgets and forecasting
- Ensure compliance with food safety, HACCP and Crown standards
- Identify opportunities to improve processes, productivity and guest satisfaction
- Contribute to business planning, innovation and long-term culinary strategies
- Foster an inclusive, high-performing culture focused on excellence and accountability
About You
You are a passionate culinary leader with extensive experience managing large teams and complex kitchen operations within premium hospitality environments.
You will bring:
- Experience in a senior culinary leadership role within a luxury hotel, integrated resort or large hospitality operation
- Strong experience managing large-scale banquet and production kitchens
- Proven financial acumen, including budgeting, forecasting and labour management
- Exceptional leadership and people development skills
- Comprehensive knowledge of HACCP, food safety and workplace safety requirements
- Strong commercial mindset with a focus on continuous improvement
- Australian recognised trade qualifications
- Michelin-star or similarly acclaimed culinary experience highly regarded
