ABOUT THE ORGANISATION
Kirushna's Tasty Kitchen is an established family-operated hospitality business based in Wollert, Victoria. We specialise in delivering authentic South Indian, North Indian, and Sri Lankan culinary experiences, prepared to traditional standards and using quality ingredients. We are currently seeking an experienced culinary professional to lead our kitchen operations and maintain our reputation for genuine flavour and consistent quality.
POSITION OVERVIEW
Reporting to the Business Owner, the successful appointee will be responsible for the preparation, production, and presentation of an extensive menu featuring authentic South Indian, North Indian, and Sri Lankan dishes. You will apply traditional cooking methodologies and preserve the distinct, original flavour profiles of each cuisine category while upholding strict operational and quality benchmarks.
KEY RESPONSIBILITIES
- Plan, prepare, and cook a full range of authentic South Indian, North Indian, and Sri Lankan menu items entirely from raw ingredients, ensuring traditional taste and consistency
- Develop and maintain standardised recipes and preparation methods across all three cuisine styles
- Prepare and blend fresh spice mixes, marinades, tempering, and base gravies according to traditional practices
- Monitor portion control, food presentation, and plate consistency to uphold service standards
- Oversee daily kitchen workflows, coordinate preparation schedules, and supervise kitchen support staff where applicable
- Manage inventory levels, conduct stock assessments, minimise wastage, and control food costs effectively
- Ensure strict adherence to food safety standards, hygiene protocols, and workplace health and safety regulations at all times
- Maintain accurate records of stock usage, production, and operational requirements
- Adapt menu items and preparation methods to meet customer requirements and seasonal availability
SELECTION CRITERIA
- Demonstrable professional experience and comprehensive expertise in preparing authentic South Indian, North Indian, and Sri Lankan cuisines, with proven ability to replicate traditional recipes and flavours accurately
- Advanced knowledge of ingredients, regional variations, and cooking techniques specific to each cuisine style
- Understanding of cost control, yield management, and stock rotation procedures
- Current or ability to obtain a Food Safety Supervisor Certificate as required under Victorian hospitality regulations
- Valid work rights and unrestricted employment status within Australia
- Availability to work flexible hours including evenings, weekends, and designated public holidays in alignment with business trading schedules
- Strong personal organisation, reliability, and ability to work both autonomously and as part of a small team
