The Kitchen Hand is the MVP of the kitchen. It's the role everything else depends on and the one people notice most when it isn't done - a fast, physical, hands-on job in a high-volume daytime kitchen. It is not a cooking role, but it's the way into one.
Responsibilities
- Own the dish area - clean, tidy, safe, and never the reason service slows down
- Maintain dishwashing flow through service, prioritising between dishes and prep as the kitchen needs
- Know where everything is stored - equipment, prep items and stock
- Handle and store deliveries; fetch and restock as required
- Assist with prep: scaling, basic food items, decanting, portioning
- Label and date everything to HACCP standard
- Remove rubbish and sort recycling at close
- Work with the kitchen team on close-down, deep cleaning and reset - sweeping, mopping, sanitising
Interpersonal
- A great communicator - speaks up early, asks when unsure, tells people what they need to know before they need to ask
- Kind and courteous, to the team and to customers
- Able to pivot and re-prioritise the moment the kitchen demands it
- Team-oriented - this is not a role for a lone operator; the whole job is making everyone else's shift work
- Ready to help out wherever needed, including outside your own section
- Genuinely focused on what's best for the customer
Success in this role
- Service never waits on you
- The kitchen starts each morning clean, reset and ready
- You can find anything, immediately - no one else stops work to look
- You move before you're asked: the pile, the empty container, the delivery
- You handle problems as they arise rather than leaving them
- You stick with it and absorb the role - that's what makes a kitchen hand valuable, and it's the path into cooking

- No nights, no split shifts - you're finished by 3pm
