Kerala Chef – Casual / Part‑Time (Eltham, Victoria)
About the Role We are seeking a talented and passionate Kerala‑style Indian Chef to join our team at our Indian restaurant in Eltham, Victoria. This casual/part‑time position (“Evening and weekend availability preferred.”) is ideal for someone who brings authentic regional Kerala flavours, strong culinary technique, and a genuine love for traditional South Indian cooking.
Key Responsibilities
- Prepare, cook, and present authentic Kerala dishes including curries, seafood specialties, vegetarian classics, biryanis, and traditional breakfast items.
- Maintain consistency, quality, and authenticity across all Kerala menu items.
- Work collaboratively with the kitchen team to support daily service and special menu events.
- Ensure strict adherence to Victorian food safety standards and allergen‑management procedures.
- Maintain a clean, organised, and efficient work environment.
Required Skills & Experience
- Proven experience cooking Kerala cuisine in a professional kitchen (restaurant or catering).
- Strong knowledge of regional Kerala dishes such as:
- Malabar biryani
- Kerala fish curry
- Thoran, Avial, Olan
- Puttu, Appam, Idiyappam
- Beef fry, Kerala-style chicken roast
- Ability to prepare fresh masalas, coastal flavours, and traditional Kerala techniques.
- Food Safety and Allergen Certification (mandatory).
- Ability to work independently during busy service periods.
- Strong communication skills and a positive, team‑focused attitude.
Preferred (but not essential)
- Experience in South Indian or broader Indian regional cuisines.
- Knowledge of vegetarian and vegan Kerala dishes.
- Familiarity with modern kitchen equipment and efficient prep systems.
