Sous Chef Full Time
Main Duties include:
· Report to Head Chef and work closely on running a professional kitchen
· Supervision of staff, supporting chef with stocktakes, ordering and rosters
· Prepare and ensure all menu is presented for service in a quality and timely manner
· Undertake preparation and cooking, baking, pastry cooking or butchering duties as required.
· Ensure food preparation is undertaken in accordance with food safety plan and food safety and Occupational Health and Safety (‘OHS’) regulatory requirements
· Ensure food storage is in accordance with food safety plan and regulatory requirements.
· Provide and support the whole kitchen brigade during lunch and dinner service
· Monitor supplies in accordance with volume/ menu requirements and advise Head Chef of requirements as necessary
· Training of junior kitchen staff on dish specification and how to achieve food margins in line with company requirements
· Manage the day-to-day food administration ensuring systems compliance
· Contribute to the food cost initiative of the restaurant
Applicants should have the following:
· Holds a Certificate IV in Hospitality (Commercial Cookery) or equivalent.
· At least 3-4 years of experience in similar environment
· Great communication skills
· Willingness to learn and develop in all areas of the kitchen
· Ability to work as team member with great customer service skills
· Proven experience in a busy fast paced kitchen
· Experience running a busy section
