Raku Dining is looking for a Sushi Chef to join our team.
Job Tasks and Responsibilities
We are seeking applicants who are professional and reliable with a passion for Japanese fine dining and a positive team attitude. As the Sushi Chef, your role will include but not limited to the following:
- Cutting, slicing, and filleting different type of fish for sushi dishes
- Inspecting the quality of fruits, vegetables, and fishes used to prepare sushi dishes and informing the head chef when quality is sub-standard
- Preparing various type of sushi dishes and other dishes according to established guidelines on quality, portion size, presentation, and food safety
- Minimising wastage while ensuring menu items are always available and meet the fine dining standard
- Ensuring kitchen and work station is kept clean and organised at all times
- Ensuring all food safety requirements are met including daily temperature checks
- Maintaining a professional personal appearance and hygiene
- Maintaining effective communication of arising issues with other staffs and managements
- Assisting the Head Chef with updating menu items
Skills and Experience:
- Knowledge of Japanese cuisine
- Experienced in Fine Dining environment
- Regulate temperatures of ovens, grills and other cooking equipment.
- Prepare food for cooking.
- Cook food by a range of methods (i.e. baking, braising, frying, roasting or steaming).
- Divide food into portions and ensure that the food is well presented.
- Clean food preparation areas and equipment.
- Store food correctly in temperature-controlled facilities.
- Take stock of ingredients and equipment and place orders to replenish stock.
- Receive and store supplies.
- Prepare food to meet special dietary requirements
Job Type: Full-time, Permanent
Pay: $79,000.00 – $85,000.00 per year
