About the Gingin Hotel
Located in the historic town of Gingin, the Gingin Hotel is a country hospitality venue serving the local community as well as visitors to the region. Our kitchen offers a varied pub-style menu, with dishes ranging from steaks and schnitzels to seafood, pasta, curries, salads and other established favourites.
We are looking for an experienced Chef who enjoys working in a hands-on kitchen environment and takes pride in producing consistently good food.
About the Position
Gingin Hotel is seeking an experienced Chef to join our kitchen team on a permanent full-time basis.
The position involves preparing and cooking meals across our regular à la carte menu as well as supporting the Hotel's changing weekly food offerings and specials. Our kitchen produces a broad range of traditional and contemporary pub meals, including grilled meats, schnitzels, seafood, burgers, pizzas, pasta dishes, curries and Sunday roasts.
The successful applicant will be comfortable working across different areas of the kitchen and managing the demands of both lunch and dinner service.
Your duties will include:
· Preparing and cooking dishes across the Hotel's à la carte menu and weekly food specials;
· Completing daily mise en place and ensuring sufficient ingredients are prepared before commencement of lunch and dinner service;
· Working across grill, fryer, pans, pizza and other kitchen sections as required;
· Preparing steaks and other grilled meats to customers' requested cooking preferences;
· Preparing schnitzels, parmigianas, seafood dishes, burgers, pasta, curries, pizzas, salads and other menu items;
· Preparing sauces, dressings, marinades and accompaniments used throughout the menu;
· Preparing weekly and rotating offerings such as Chef's curry selections, pizza and pasta specials and Sunday roasts;
· Managing cooking times across several orders to ensure components are completed together and meals are served promptly;
· Following established recipes, portion sizes and plating standards to maintain consistency between services;
· Checking ingredients prior to preparation and ensuring food used for service meets required freshness and quality standards;
· Monitoring preparation levels and adjusting quantities according to expected trade, bookings, weekly promotions and busy service periods;
· Contributing ideas for new dishes, weekly specials and changes to existing menu offerings;
· Assisting with menu planning, determining food requirements and monitoring ingredient costs to support efficient kitchen operations;
· Accommodating customer dietary requirements and menu modifications where reasonably possible, including vegetarian and gluten-free options;
· Monitoring stock within the kitchen and identifying ingredients and supplies requiring replenishment;
· Receiving food deliveries and ensuring refrigerated, frozen and dry goods are stored correctly;
· Rotating stock appropriately and monitoring food usage to assist in controlling spoilage and unnecessary wastage;
· Maintaining a clean, organised and hygienic kitchen section before, during and after service;
· Ensuring food is prepared, stored and handled in accordance with food safety and hygiene requirements;
· Communicating with front-of-house staff regarding meal availability, customer dietary requirements, modifications and service timing;
· Assisting and guiding junior or less experienced kitchen staff during preparation and service where required; and
· Working cooperatively with the wider kitchen team to maintain an efficient service during busy trading periods.
Qualifications and Experience Required
Applicants must have either:
· A relevant Diploma or Advanced Diploma level qualification in Hospitality or a related field, together with at least one year of relevant full-time work experience;
OR
· At least three years of relevant full-time work experience in lieu of formal qualifications.

The successful applicant should demonstrate:
· Strong practical cooking and food preparation skills;
· Competence across a range of cooking methods, including grilling, frying, roasting and sautéing;
· Ability to work across different kitchen sections as required;
· Good understanding of food safety, hygiene and safe food-handling practices;
· Strong organisational skills and the ability to prioritise competing orders;
· Ability to maintain consistency in taste, portion size and presentation;
· Good time management and the ability to perform effectively during busy lunch and dinner services;
· Attention to detail and pride in the quality of meals produced;
· Effective communication skills and the ability to work cooperatively with kitchen and front-of-house staff;
· Ability to work independently when required while contributing positively to the wider team;
· Reliability, punctuality and a professional approach to work; and
· Flexibility to work weekends, evenings and peak hospitality periods in accordance with the roster.
