TRIDENT LISMORE PTY LTD t/a The Trident Fish and Grill is seeking reliable and capable Cooks to support kitchen operations in Lismore, NSW 2480.The business operates as an established restaurant-style venue, delivering a structured menu with a strong focus on seafood, consistent service standards, and steady customer demand driven by both local and regional trade.
This is a full-time position offering a salary range of AUD 72,000 to AUD 80,000 per annum plus superannuation, aligned with market salary rates and the operational requirements of the role.
The successful candidate will play a key role in supporting end-to-end food preparation and service delivery, ensuring consistency in menu execution, maintaining quality standards, and contributing to efficient kitchen operations across all trading periods.
Scope of the role:
- Assess food items to ensure they meet quality and safety criteria.
- Control the temperatures of cooking equipment to achieve ideal cooking conditions.
- Prepare and cook a diverse range of meals following established recipes and presentation guidelines.
- Season dishes correctly during the cooking process to enhance flavour.
- Serve food in appropriate portions, ensuring an appealing presentation with sauces and garnishes.
- Store food in temperature-controlled environments to maintain freshness and prevent spoilage.
- Prepare meals that accommodate specific dietary needs and restrictions.
- Assist in designing seasonal menus that reflect customer preferences and available ingredients.
- Calculate food requirements for events and daily operations to minimise waste and ensure adequate supply.
- Monitor inventory levels of ingredients and supplies, placing orders as necessary to maintain stock.
- Train and mentor kitchen staff and apprentices on cooking techniques, food safety practices, and kitchen operations.
- Collaborate with other kitchen staff to ensure efficient workflow and timely service during busy periods.
- Experiment with new recipes and cooking techniques to continually improve the menu offerings
To be considered for this role, you should:
- Hold a Certificate III in Commercial Cookery or equivalent qualification
- Have at least 1–2 years of experience in a commercial kitchen environment
- Demonstrate the ability to perform under pressure in a fast-paced setting
- Be reliable, organised, and hands-on in approach
- Have a strong understanding of food safety standards and compliance requirements
- Be available to work weekends, evenings, and split shifts as required
- Ready to relocate to nearby regions
