Role Overview
This full-time Sous Chef position involves planning and preparing a range of dishes, coordinating kitchen operations, maintaining food quality and presentation standards, and ensuring compliance with food safety and hygiene requirements. The successful applicant will contribute to delivering high-quality food and service.
Duties and Responsibilities
- Lead Lunch Service – oversee the kitchen and sections through the full lunch shift, coordinating kitchen activities to ensure efficient and consistent service during busy periods.
- Execute Classic French Dish – prepare, cook and finish dishes in accordance with menu specifications and FRENCHIE’s standard for taste, quality, presentation and portioning.
- Menu & Kitchen Operations – assist with developing and updating menu based on customer requirements, available ingredients and kitchen capacity, while considering food and labour costs.
- Prep Ownership – ensure mise en place is completed and kitchen operations are organised for a smooth, high-volume service.
- Stock & Ingredients – coordinate the purchase and supply of ingredients, monitor stock level and ensure appropriate storage and preservation of food to maintain quality and minimise waste.
- Team leadership – guide and support Chef de Partie during lunch service, provide practical instructions to cooking methods, preparation techniques and kitchen procedures, and assist with the selection and training of kitchen staff where required.
- Standard & Consistency – inspect food throughout preparation and before service to ensure dishes meet uphold FRENCHIE’s standards for quality, taste and presentation.
- Communication & Coordination – communicate with Managers, kitchen staff and waiting staff regarding menu requirements, food preparation and service matters, and work collaboratively with the team to maintain smooth service.
- Hygiene & Safety – maintain a clean, organised and compliant kitchen and ensure proper food safety, cleanliness and hygiene practices are followed throughout kitchen operations.
What We’re Looking For
· Proven Sous Chef or Senior CDP experience in busy kitchen.
· Strong leadership skills and the ability to confidently own a shift under pressure.
· Experience preparing and cooking dishes to a consistently high standard.
· Passion for French cuisine and classic cooking techniques.
· Strong understanding of kitchen operations, food preparation and service.
· Reliability and a team-first mindset.
· Ability to work autonomously and coordinate kitchen operations during busy service periods.
Qualifications and Experience
- AQF associate degree, Advanced Diploma or Diploma (ANZSCO Skill Level 2); or
- At least three years of relevant experience may substitute for the formal qualifications listed above.
