Position Overview:
We are seeking an experienced, passionate, and highly skilled Full-Time Chef to join our kitchen team. The successful candidate will take charge of managing the food preparation, cooking, and production of our specialized menu, ensuring that traditional flavour profiles, presentation, and strict food safety standards are maintained at all times during high-volume periods.
Key Duties and Responsibilities:
- Plan, organize, and direct the food preparation and cooking processes for all pizza, kebab, and complementary Middle Eastern menu items.
- Prepare and marinate specialized meats according to traditional recipes, ensuring correct meat-layering techniques for commercial rotisserie spits.
- Develop, test, and introduce innovative new dishes and seasonal specials to expand our menu while maintaining authentic flavour profiles and strict food cost targets.
- Oversee the dough production, stretching, topping, and precise temperature-controlled baking of pizzas in commercial high-heat ovens.
- Monitor and manage kitchen inventory, estimate food consumption, and order supplies/ingredients from approved vendors to minimize waste.
- Maintain rigorous hygiene and food safety protocols across all work sections in strict compliance with Australian food safety standards and HACCP guidelines.
- Inspect, clean, and supervise the maintenance of commercial kitchen equipment, including rotisseries, pizza ovens, and preparation areas.
- Train, supervise, and coordinate junior kitchen staff, kitchen hands, and apprentices in safe food handling and cooking techniques.
- Explain and enforce portion control sizes to ensure consistent cost management and final food presentation.
Required Skills, Qualifications, and Experience:
- Qualifications: An Australian AQF Certificate IV in Commercial Cookery (or an equivalent international qualification).
- Experience: Hands-on experience working as a Chef in a fast-paced, high-volume kitchen.
- Technical Skills: Deep understanding of food portioning, menu planning, traditional spice blending, and large-scale catering operations.
- Attributes: Ability to work efficiently under pressure during peak weekend evening rushes, strong communication skills in English, and a collaborative team-focused mindset.
- Availability: Willing and able to work at nights, weekends, and public holidays.
