Ace Hotel Sydney is our first-ever spot in Australia, set in the verve of Surry Hills. Inspired by the neighbourhood’s vibrant rhythm, Ace Sydney is home to a bustling public Lobby alive nearly nightly with DJs and performers, a rebellious art program and sunken lounge just off the Lobby bar. We’ve also got three distinct restaurants: our hatted restaurant Kiln; our oasis for fresh, seasonal fare called LOAM; and a day-to-night laneway café, Good Chemistry. Now all we need is you.
The Gig
As our Chef de Partie, you will take proud ownership of your section, ensuring every dish is perfectly cooked, beautifully presented, and delivered efficiently to our guests, even during the busiest services. You will play a highly collaborative role in our kitchen, working closely with the Head Chef to experiment with new techniques and brainstorm exciting menu items. Beyond this, you will step up as a mentor to guide, train, and support our junior chefs. You will also take full responsibility for your station by carefully managing ingredient storage, minimising waste, and ensuring your workspace remains spotless and fully compliant with all health and safety standards.
About you
- You are an ambitious chef looking for a fantastic opportunity to step up and take true ownership of your section.
- You hold a Culinary Diploma (or similar) and possess a deep knowledge of diverse cooking techniques.
- You bring at least two years of hands-on experience specifically spanning events and pastry.
- You are a calm, communicative leader who can easily multitask through busy services while guiding junior staff.
- You are flexibly available for a rotating roster that includes nights, weekends, and public holidays.
- You hold permanent, unrestricted working rights in Australia.
