About the role
We are seeking a motivated and talented Pastry chef to work with us on a full-time basis (per annum $75,0000 -$80,000)
You will be responsible for, but not limited to, the following:
- Inspecting pastry equipment, work surfaces and baking areas before production
to ensure cleanliness and compliance with food safety and OHS requirements.
- Assessing the quality of baking ingredients (e.g., flour, butter, chocolate,
fillings) and accurately weighing and measuring components for pastry recipes.
- Kneading, resting, laminating, cutting, moulding, mixing and shaping doughs
and pastry products such as croissants, danishes, tarts and specialty pastries.
- Preparing a range of pastry fillings, creams, custards, glazes and garnishes.
- Monitoring oven temperatures, baking conditions and the appearance of pastry
items to determine correct baking times and ensure consistent quality.
- Coordinating the preparation, loading, baking, unloading, cooling and finishing
of batches of pastries, sweet buns, laminated doughs and baked dessert
products.
- Applying glazes, washes and syrups to pastries and decorating cakes, tarts and
dessert items using icing, cream, chocolate and other decorative techniques.
- Operating pastry-specific machinery such as dough sheeters, pastry rollers,
cutters and depositor equipment.
- Cleaning, sanitising and preparing baking trays, tins, moulds and other pastry
equipment, including greasing and lining as required.
QUALIFICATIONS
- Certificate III and 2 years on the job training; or,
- Certificate IV; or,
- 3 years relevant experience.

- Salary range - $75,000.00 - $80,000.00 plus superannuation
