The Coffee Emporium, located in Bankstown NSW 2200, requires a full-time, skilled, and experienced Chef to manage our kitchen, guide, train and handle the staff independently.
To be considered for this role you must have:
- AQF Associate Degree, Advanced Diploma or Diploma.
- Or at least three years of relevant experience to substitute the formal qualification.
- At least 2-3 years of experience in similar role.
- You must be an Australian Citizen/ Permanent Resident or have proper working rights.
Role:
The position of Chef is a ‘hands on’ position, responsible for working in and assisting in managing the operation of the kitchen on a day-to-day basis. The Chef is an integral part of the restaurant and its’ Team and is responsible for innovative cooking, and for guiding and training the kitchen staff in their daily duties.
Your main duties include:
- Primarily responsible for overseeing the kitchen operation of the business and coordinate the work with cooks and other kitchen staff.
- Responsible for designing the menu, review food and beverage purchases, and often train cooks and other food preparation workers.
- Maintain high standards of food hygiene and health & safety at all times.
- Responsible for Preparation, cooking and presenting dishes as per business menu and demonstrate excellent food preparation practices, portion control and end to end food production.
- Follow all business operational kitchen process and procedures, achieving all required standards.
- Responsible for monitoring portion and food consumption and waste control to maintain profit margins without compromising 100% customer satisfaction.
- Take responsibility for delivering the highest measures of food production and presentation to customers including managing the live cooking stations.
- Suggest innovation and commercially viable ideas to improve food quality and introduce new seasonal dishes.
- Check freshness of food and ingredients.
- Plan menus, develop recipes, ensure uniform serving sizes and quality of meals, and determine how to present the food.
- Supervise and coordinate activities of cooks and other food preparation workers.
- Inspect supplies, equipment, and work areas for cleanliness and functionality.
- Order and maintain inventory of food and supplies.
Key Behaviours:
- At least 2-3 years of work experience in similar role and plating styles ambience and presentation.
- Familiar with different culinary cooking methods products and techniques.
- Organised planner of menu development focused on different food items.
- Knowledge of all continental spices and cooking tools.
- Comfortable adjusting food to taste, diet etc.
- Thrives under pressure in a high-volume food environment.
- High standard of personal hygiene.
- Excellent knowledge of relevant food and health & safety regulations.
The suitable candidate will have excellent organisational and communication skills.
Salary - $78,000-$85,000 plus super
