Johnny, Vince & Sam’s Ristorante is one of Carlton’s most recognisable Italian dining destinations. Located in the heart of Lygon Street, the restaurant is known for its lively atmosphere, generous Italian food and warm, family-style hospitality.
We are looking for an experienced hospitality leader who can work closely with the Venue Manager to oversee daily operations, lead the front-of-house team and maintain consistently high standards across service, people and commercial performance.
The Role
This is a senior, hands-on management position for someone who understands how to lead a busy restaurant from the floor.
You will support the Venue Manager across daily operations while taking ownership of shifts, team performance, guest experience, service standards and operational procedures.
The successful candidate will be confident managing people, making decisions during service and maintaining control of a fast-paced venue without losing the warmth and personality that define the Johnny, Vince & Sam’s experience.

What You’ll Do
- Support the Venue Manager with the overall operation of the restaurant
- Lead busy lunch and dinner services from the floor
- Manage, motivate and support the front-of-house team
- Coordinate daily briefings, section allocations and service priorities
- Maintain high standards of customer service, presentation and venue cleanliness
- Respond professionally to guest feedback, complaints and service issues
- Assist with recruitment, onboarding, training and employee development
- Provide clear feedback, coaching and performance support to team members
- Assist with rostering, labour management and daily staffing requirements
- Monitor sales performance and work toward venue budgets
- Oversee cash handling, till reconciliation and end-of-day procedures
- Maintain compliance with RSA, food safety and workplace requirements
- Support stock control, ordering and beverage operations
- Work closely with the kitchen leadership team to coordinate service
- Step into broader venue-management responsibilities when required
What You’ll Bring
- At least 4 years’ experience in restaurant or hospitality management
- Experience working in a busy, high-volume restaurant environment
- Strong front-of-house leadership and service-management skills
- Confidence managing teams across nights, weekends and peak periods
- Experience working with sales, labour or operational budgets
- Strong understanding of restaurant procedures and daily venue operations
- A current Victorian RSA certificate
- Strong communication, organisation and problem-solving skills
- A practical and hands-on approach to leadership
- Ability to make confident decisions during busy services
- Ability to safely perform manual-handling duties
- Full availability across a seven-day roster, including nights and weekends
Experience with cocktails, wine or beverage operations will be highly regarded.
WSET knowledge and a current first-aid qualification would also be viewed favourably.
