Chef
What you'll be doing
As a key member of our back-of-house brigade, you’ll play an important role in delivering exceptional dishes and maintaining the high culinary standards The 203 is known for. You'll:
- Collaborate with the Head Chef and management team to design and refine seasonal menus, estimate ingredient and labour requirements, and order high-quality food supplies within budget
- Prepare, cook, and present dishes to a consistently high standard, monitoring the quality, flavour, portioning, and presentation at every stage of preparation
- Work closely with managers, kitchen staff, and front-of-house teams to discuss and resolve food preparation issues and coordinate smooth service
- Demonstrate cooking techniques, provide guidance on preparation methods, and support ongoing training for junior kitchen staff
- Uphold strict hygiene and food safety regulations, ensuring all kitchen areas and equipment are cleaned, sanitised, and maintained properly
- Assist with staff selection and contribute to training processes to support a capable and cohesive kitchen team
- Freeze, store, and preserve ingredients where appropriate to maintain freshness and minimise waste
- Provide proactive assistance during peak service periods to ensure timely and coordinated delivery of dishes
What you'll bring
- Relevant qualification (Associate Degree, Advanced Diploma or Diploma preferred); or at least 3 years of professional experience in place of formal study
- Experience in premium, modern Italian, or high-end dining environments is highly regarded

Trade Waiter
What you'll be doing
As a key member of our front-of-house team, you will play a vital role in delivering an exceptional dining experience that reflects The 203’s premium brand. You'll:
- Share expert knowledge of our menu, including ingredient sourcing, preparation techniques, and seasonal variations, to enhance the guest experience
- Ensure dining areas and tables are immaculately presented and set to The 203’s premium standards before each service
- Manage reservations and warmly welcome guests, delivering a professional and memorable first impression
- Accurately take and process guest orders, liaising efficiently with kitchen and bar teams to ensure smooth and professional service flow. Coordinate with teams to manage special dietary requirements, and other requests with precision and discretion
- Serve food and beverages with precision, grace, and attention to detail, in line with fine dining etiquette
- Open and present wine bottles, pour beverages, and mix basic cocktails as required, maintaining poise and elegance
- Maintain table service throughout the dining experience, including clearing used items, refilling drinks, and anticipating guest needs
- Ensure compliance with hygiene and food safety regulations, maintaining cleanliness and orderliness in your section at all times
What you'll bring
- Certificate III in Hospitality (AQF or RTO equivalent) with at least 12 months’ post-qualification experience; or 18 months of relevant hospitality experience in Australia; or 2+ years of industry experience, ideally in premium dining or luxury hospitality
- Strong food and wine knowledge, with a passion for steak and Italian cuisine

What you'll be doing
As Restaurant Manager, you’ll lead the daily operations and guest experience at The 203, ensuring service excellence and operational efficiency across front and back of house. You will:
- Menu Collaboration: Work with chefs and the management team to design seasonal menus that highlight our premium Australian beef and modern Italian fusion
- Event & Function Coordination: Manage exclusive dining events aligned with our brand and guest expectations
- Procurement & Pricing: Source premium ingredients within budget and develop strategic pricing that reflects our market position
- Stock Control: Maintain efficient inventory systems and provide reporting to support loss prevention and strategic planning
- Facility Standards: Oversee cleanliness, safety, and presentation of all dining and kitchen areas, ensuring compliance with health regulations
- Guest Experience: Engage with customers, gather feedback, and implement improvements to elevate the dining experience
- Recruitment: Lead hiring of front and back-of-house staff in alignment with brand standards
- Training & Development: Develop operating procedures and staff training to uphold service excellence
- Daily Operations: Manage reservations, service flow, and support the team hands-on during peak periods
What you'll bring
- A relevant qualification in Hospitality or Management (Associate Degree, Advanced Diploma or Diploma preferred), or at least three years of industry experience in lieu of formal qualifications
