Primary objective
Under the direction of the Executive Manager Food Services and Head Chef provide supervision and direction to Cooks and kitchen
hands who undertake production duties including meal plating for clients of the Alice Springs Hospital ensuring that Hazard
Analytical Critical Control Point (HACCP) Food Safe practices are followed. Leading team in the absence of the Head Chef.
Context statement
ASH Food Services adhere to a HACCP managed food safety plan along with Therapeutic diet guidelines for patients in an Acute
Care setting. This service provides meals to ASH inpatients, ASH Kiosk, MOW community patients and off-site services to Renal
Dialysis patients and works closely with the Dietetics Department and Food Service Dietitian.
Key duties and responsibilities
1. Provide daily supervisory support to Cooks and Kitchen hands to ensure that agreed service delivery, production schedules and
equipment is maintained.
2. Ensure production complies with HACCP Food Safe plan and practices for all food service operations by conducting internal
audits in timely manner.
3. Strong communication and interpersonal skills when providing comprehensive information and direction.
4. Assist with training of staff in all areas and maintain training standards including Therapeutic diets.
5. Work with Head Chef and Stores Officer as required on quality and control of products
6. Confident to work in each and every section of the production.
7. Foster a positive workplace culture through exemplary leadership practices and role modelling behaviour.
8. Follow defined service quality standards, work health and safety policies and procedures relating to the work being undertaken
in order to ensure high quality, safe services and workplaces.
Selection criteria
Essential
1. Recognised Certificate III or IV in Commercial Cookery with demonstrated experience in commercial cookery in health care
environment, including menu planning and stock control.
2. Demonstrated experience and understanding in HACCP processes, Food Safety Plans, food legislation.
3. Demonstrated high level written and oral communication and sound knowledge of computer applications including MS office
software.
4. Proven ability to complete tasks to meet deadlines.
5. Demonstrate the ability to work in a team environment.
6. Proven time management skills and the ability to manage a fluctuating workload.
7. Displays self-motivation and commitment to quality improvements as part of change management.
8. Ability to work across a 7-day rotating roster including weekends as rostered.
9. Ability to follow the directions from Executive Manager of Food Services, Head Chef and Internal Auditor.
Desirable
1. Food Safety Supervisor Certificate and Allergy Management Certificate.
