Position Summary
The Restaurant Manager is responsible for overseeing the daily operations of Graze Apollo Bay, ensuring high quality customer service, efficient staff management, and smooth operational performance. The candidate requires strong leadership, hospitality experience, and the ability to manage a busy venue in a regional, tourism driven environment. The role also supports the business’s digital presence through website creation and updates, social media content creation, and photography to promote the venue, menu items, and seasonal events.
Key Duties & Responsibilities
- Planning and organising daily restaurant operations, including service flow, staffing, and customer service delivery.
- Ensuring high standards of food and beverage service are consistently maintained.
- Managing staff, including rostering, supervising, training, performance management, and supporting junior team members.
- Overseeing stock control, including ordering, receiving, storage, and inventory management.
- Monitoring supplier relationships and ensuring cost effective purchasing.
- Maintaining compliance with food safety regulations, liquor licensing laws, workplace health and safety requirements, and company policies.
- Handling customer enquiries, feedback, and complaints professionally and promptly.
- Managing cash handling, daily takings, and reconciliation procedures.
- Assisting with menu planning, promotions, and seasonal adjustments.
- Ensuring the venue is clean, presentable, and operating efficiently always.
- Supporting business growth, including improving service processes, and contributing to operational decisions.
Skills, Experience & Qualifications Required
- At least two years of relevant hospitality management experience
- Strong leadership and staff supervision skills
- Experience in a fastpaced restaurant environment.
- Knowledge of food safety standards and liquor licensing requirements
- Excellent communication and customer service skills
- Ability to manage rostering, stock control, and supplier relationships.
- Ability to work evenings, weekends, and peak tourism periods.
- Ability to train and support junior staff.
- Strong organisational and problem solving skills.
- Proficiency in a second language is highly beneficial, supporting communication with international visitors and diverse staff.
Formal qualifications in hospitality management are desirable but not mandatory.
Digital Skills
- Website editing skills (e.g., updating menus, hours, promotions)
- Experience with social media management.
- Ability to produce high quality photography for marketing.
- Understanding of digital branding and customer engagement.
Reporting Structure
The Restaurant Manager reports directly to the Directors, Graze Apollo Bay Pty Ltd.
The role supervises:
- Front of house staff.
- Bar staff
- Junior supervisors
- Casual and seasonal staff
Hours of Work
Fulltime, 38 hours per week, with additional hours as required during peak periods (in accordance with Fair Work legislation).
Terms & Conditions
- Fulltime ongoing employment.
- Salary: $70,000 - $80,000 per annum.,
- No nonmonetary benefits provided.
- Employment conditions consistent with the Fair Work Act 2009 and the Hospitality Industry (General) Award.
- The role is based in Apollo Bay, Victoria.
