Filante Woodfire Pizzeria is an authentic Italian pizzeria restaurant in the Banksmeadow (Botany) area of Sydney. It opened in April 2020 and seats around 70 patrons. We specialise in Romana-style pizza “with a twist” as well as traditional Italian dishes & desserts prepared with love with local ingredients and some imported Italian delicacies via our partner Deni Grocer. Filante Woodfire Pizzeria is not only a Pizzeria it’s a full Italian restaurant hoping to give our customers the Italian food experience, where you can come dine in, takeaway or get delivery at home. We always cater to special functions and private events as well as group bookings. Our huge menu range varies from hand crafted entrees, antipasto selections, fresh pasta & pizza as well as our delicious in house made desserts.

Supervisor/manager: the 2 owners
Remuneration: $80,000 - $82,000 gross per year before superannuation
Responsibilities:
- Create and prepare dishes for our patrons’ pleasure
- In collaboration with the owners, develop new items or specials as required: recommend new recipes to update our menus when required as well as creating monthly specials or special menus for occasions/events
- Prepare pizzas out of our menu and based on custom orders
- Handle all preparation required for the pizza & pasta section including chopping vegetables, herbs, dough preparation, sauces and pasta
- Preparing pasta dishes, entrees and antipasto
- Rolling/making fresh pasta
- Creating, preparing and cooking different variations of sauces for pasta dishes
- Slicing of cold cuts and small goods
- Making sure woodfire oven is turned on and ready for use at correct temperatures before shift.
- Making sure water boiler, fryer and oven is ready for use before each shift
- Baking a wide variety of pizza doughs checking quality before serving
- Ensure all preparation is completed prior to service
- Presenting/serving a finished product to managements standards. Nonburn or damaged, with required ingredients as stated on the menu, cooked correctly etc
- Required to make sure all equipment is cared for and cleaned
- Following instructions/recipes in preparing all Filante Woodfire Pizzeria dough, desserts, pizzas, menu etc
- Monitor food stock and advise store management of any orders, create budgets to ensure profitable food cost
- Use less traditional ingredients to appeal to a larger audience (for example, vegan cheese and gluten-free flour)
- Commitment to customer service and customers’ needs
- Assist and prepare with other areas if required outside pizza section
- Maintain a clean cooking station and sterilize equipment daily
- Teach, manage and develop casual employee pizza chefs or line cooks
- Working to the roster provided that could change week by week
- Be available for special functions & events outside trading hours
Requirements and skills:
- Certificate / Diploma from a culinary school is a plus not a requirement
- At least 5 years of work experience as a Chef in a restaurant
- Experiences in Italian restaurants preparing traditional fares a must
- Hands-on experience with preparing and baking pizza doughs
- Ability to cook & prepare fresh pasta
- Experiences in European cuisines highly valued
- Familiarity with professional kitchen equipment and brick or stone oven
- Ability to train and develop others
- Understanding of food hygiene

Pay: $80,000.00 – $82,000.00 per year
