About Three Blue Ducks x Burradoo Park Farm
Three Blue Ducks at Burradoo Park Farm is a 600-acre working regenerative farm in the NSW Southern Highlands, home to three distinct food venues: The Bakehouse by Three Blue Ducks, The Farmhouse by Three Blue Ducks, and the Three Blue Ducks restaurant, our most elevated dining experience yet. Every one of these venues is shaped by what grows, grazes, and is harvested on-site - and every person in our team is part of that story.
The Restaurant
Three Blue Ducks is opening a new destination restaurant at Burradoo Park Farm, and we're looking for an experienced and passionate Sommelier to join our opening team.
Set within a beautifully restored 1800s farmhouse, the restaurant will offer an intimate, seasonal dining experience, shaped entirely by what's grown and raised on-site. You'll be working alongside Group Executive Chef Troy Crisante (formerly co-head chef at three-hatted Quay) and Head Chef Rhys Connell (formerly of three-hatted Sepia), with broader direction from co-owners Darren Robertson and Andy Allen.
This is not a traditional fine dining role. We're creating a thoughtful, produce-led dining experience where wine plays a key role in telling the story of the land, the seasons and the producers behind each bottle.
Working closely with our Head Chef and leadership team, you'll curate and deliver a wine experience that feels considered, approachable and aligned with the Ducks ethos.
What you’ll be doing:
Leading wine service across lunch and dinner service
Guiding guests through wine selections and pairings in a relaxed, engaging and knowledgeable way
Supporting and evolving the wine list, with a focus on seasonal, sustainable and small-scale producers
Building relationships with wineries, distributors and producers
Training and developing the front-of-house team in wine knowledge and service standards
Managing stock levels, ordering, inventory and cellar organisation
Ensuring wine service standards are consistently delivered to a high level
About you:
Proven experience as a Sommelier or in a senior wine-focused hospitality role
Strong knowledge of Australian and international wines
WSET qualifications or equivalent highly regarded
Passion for producers, sustainability and storytelling through wine
Confident, warm and guest-focused service style
