Toby's Estate is creating a new hospitality concept on George Street, bringing together exceptional specialty coffee and an intimate cocktail bar experience.
We're looking for an experienced Head Barista to help build and lead the coffee operation from day one.
This is an opportunity for someone who has genuine specialty coffee knowledge, strong technical ability and a passion for setting exceptional standards.
You won't simply be making coffee. You'll help with the high standards of specialty coffee that the world expects from Toby's Estate.
The Role
As Head Barista, you'll be the coffee leader on the floor and a key part of establishing the venue's identity.
You'll be responsible for:
- Setting and maintaining exceptional coffee quality and presentation standards
- Leading coffee service and ensuring consistency throughout every service
- Training, coaching and developing the barista team
- Supporting the Venue Manager in establishing coffee systems and procedures
- Maintaining strong technical standards across espresso preparation and extraction
- Supporting coffee equipment setup, calibration and daily maintenance
- Helping develop and refine the coffee offering
- Educating the team on coffee knowledge, preparation and service
- Leading by example during busy service
- Creating an exceptional specialty coffee experience for our guests
About You
This role is for someone who really knows coffee.
We're looking for an experienced specialty coffee professional who is confident not only behind the machine, but also in teaching others and maintaining a high technical standard.
You'll bring:
- Significant professional experience within specialty coffee
- Advanced espresso and extraction knowledge
- Strong understanding of coffee quality, flavour and presentation
- Experience calibrating and maintaining espresso equipment
- Experience training and developing baristas
- A strong understanding of specialty coffee service
- Confidence leading a barista team in a high-volume environment
- Excellent communication and leadership skills
- A genuine passion for specialty coffee and continuous improvement
- High attention to detail and uncompromising quality standards
- Experience with V60 brewing method
Previous experience as a Head Barista, Coffee Trainer, Coffee Specialist, Café Manager or Senior Barista will be highly regarded.

Experience
- Specialty Coffee: 3+ years (Required)
- Senior Barista / Head Barista experience (Required)
Licence / Certification
- Food Safety Supervisor Certificate preferred
- RSA essential

Pay: $35.00 – $40.00 per hour
